These meringue and buttercream sandwich cookies are addictive! We dare you to have just one.
Save this recipe: taste.md/2oerBio
INGREDIENTS:
6 egg whites
½ tsp cream of tartar
¾ cup sugar
1 cup unsalted cashews, finely chopped
For the buttercream:
6 egg yolks
½ cup water
1 cup granulated sugar
1 cup salted butter, cubed and softened
flavored extract of your choice
Food coloring of your choice
For the coating:
2 tsp vodka
Food coloring of your choice
1 ½ cups fine graham cracker crumbs
STEPS:
1.) Preheat oven to 300°F. In a mixer, beat egg whites, until frothy on high speed. Gradually add cream of tartar, and beat until stiff. Then gradually sprinkle in sugar and continue beating, until it appears glossy. Use a spatula to fold in cashews gradually. Be sure to not deflate by over mixing.
2.) Line 2 baking trays with parchment paper. Transfer mixture into a piping bag and pipe into small circles. Smooth the tops with a knife or offset spatula. Tap the sheet on the counter to remove bubbles. Bake for about 15-20 minutes. Allow to cool.
3.) Meanwhile make the buttercream: combine water and sugar in a saucepan. Heat while occasionally stirring, until the temperature reaches 225°F or thick and bubbling. Beat egg yolks on high, until thickened and pale in color. Turn the speed to medium and slowly pour the syrup in a thin stream into the yolks, so you don’t scramble the yolks. Gradually add a few butter cubes at a time, while mixing. Divide into 3 bowls, and mix in different extracts and food coloring of your choice. Chill in the fridge for 15 minutes. Before assembling, whip it one more time to make it workable.
4.) Make the coating: divide the crumbs into three Ziploc bags. In small bowls, add 4-5 drops of different food colors and distribute the rum into 3 equal parts. Mix well and add the colors into each separate bag. Use your hands to mix well.
5.) To assemble: spread some buttercream on a meringue cookie and sandwich with another cookie. Gently squeeze the sandwich, and spread the excess onto the flat sides of the cookie. Coat each cookie in the different colored crumbs.

Darion Wilson they kinda are a Filipino version of macarons, especially since Sans Rival (the full sized cake version of Sylvanas) was created by Filipino chefs who studied in a French culinary school. Sylvanas were inspired by Sans Rival, so that's why there are differences from French macarons. For example, French macarons use almond flour (ground up almonds) in their meringue batter, while both Sans Rival and Syvanas use either crushed or ground cashews instead. Jen uses more chunky cashews but most shops that make Sylvanas will grind them up a bit finer, more similar to the almond flour in macarons.

Interesting! I wish that it was easier to find Southeast Asian bakeries in the US, there are so many wonderful Thai and Filipino and Indonesian desserts and pastries that Americans are missing-out on!

I thought there were no more House of Silvanas in LA? Last time I went there with family, we went to a Filipino restaurant that was affiliated with House of Silvanas, and the owner said that they were going to stop selling silvanas soon

I thought so too, I went to one in LA also affiliated with them and the owner said they wouldn't be selling them much longer. That was a few years ago though, so maybe House of Silvanas is back in LA?

if you wanna make "yolk less" better cream which is sold in most stores, you just cream butter and sugar together in till butter if fluff, (could always add cream cheese to, my fav)

with macarons i know you can smooth the points down with a finger dipped in water. I'm sure that would work here as well

I love these, but always balk because they're expensive. No wonder! It's freaking labor-intensive! D: But thanks for making these Jen. Haven't tasted the flavored ones, but those are something to look forward to when I have my own kitchen. :)

Hi. I just want to know what heat source to use when making those silvanas. My oven has upper heat and lower heat and everytine I bake meringue it end up burnt or under cook. 😭

It got soupy/watery too... I think the ratio of water and sugar is incorrect. The water should only be less than 1/4 c water and not 1/2 c water. I looked at other recipes and it says only 3 TBSP of water to a 1/2 c sugar. That would make a difference on the soupy side eggyolk mixture.

Not really. Silvanas have a different texture and taste. Personally, I like silvanas more than macarons, which I think are overrated (gasp!)
