This warm and comforting coconut, tapioca, and jackfruit dessert is pretty baller.
Ingredients-
For the bilo-bilo:
1 cup sweet rice flour
¼ cup water
For the rest:
2 cans coconut milk
2 cups water
1 cup canned jackfruit, strained and sliced
1 cup cooked small tapioca pearls (or sago)
Sugar to taste
Pinch of salt
Steps-
To make the bilo bilo: in a bowl, gradually add water to sweet rice flour while mixing. Once a non-sticky dough ball forms, pinch off some of the mixture to create small balls, by rolling them in between your hands. Arrange bilo bilo on a single layer and set aside.
In a pot, add water, coconut milk, and sugar and bring to a boil. Slowly add the bilo-bilo and stir immediately to prevent sticking. Reduce heat to a simmer and add jackfruit. Stir occasionally.
Once the bilo bilo have floated to the top and are fully cooked, add cooked tapioca pearls and stir well. Stir in a pinch of salt. Serve while warm.

I have fond memories of helping my mom, titas, & Lolas make this. So glad I hung out in the kitchen with them as a little girl. No recipes were written, just passed down by doing it. Gutom na naaman ako.

Omg I used to make this as a child with my Lola! The big tapioca balls were my favorite so I'd make them huge and my Lola would think I was crazy lol. Love this video!

Aaaagh yes I love bilo bilo!! My grandma called it tambo tambo (I’m assuming that’s what it’s called in Ilocano), and she would add guava (both pink and white) and taro along with everything else. It’s sooo good!

This video brings out my childhood memories! we (me and my cousins) always help our lola prepare this. I miss those times we spend merienda and kwentuhan together. Now, my lola is in heaven and my cousins are far away. If we could only bring back time :(

Here's a tip for making it ahead: Roll the sweet rice balls and place them on a cookie sheet. Dust them with extra sweet rice flour so they don't stick. Freeze the sweet rice balls on the cookie sheet and after they harden you can place them in zip-lock bags and back in the freezer. When you're ready to use, boil them in the water and sugar. Add the coconut milk once the balls float to the top. Then add the rest of the ingredients. The rice balls can last in the freezer up to 2 months.

aahh this brings childhood memories! my grandma loved making this every weekend. she changed up the recipe every time though. she added pandan leaves, or sweet potatoes, or boiled bananas. i love them❣️

Brings back so many memories! Me and my sisters would help roll a tray full of bilo-bilo balls with our late-grandma. I love my bilo-bilo with all the usual fix-ins, like halo-halo but hotter.

That's what my late mother taught me to add a pinch of salt to bilo bilo/binignit to enhance or balance the flavors. This is one of my favorites too! 👍 Goodwork Jen! #drooling

this is the best snack during cold rainy days. without all the sugar, all ingredients are actually healthy. full of rootcrops and plantane. This is something other countries are missing or is it just me. edited: this is definitely not the pinoy bilo bilo filipinos know. where are the sweet potato, plantane, ube and the other root crops?

Bilo2 counterpart in Malaysia is Cendol.. same coconut, but with Gula Melaka, and those balls exchangable with cendol’s green “worms” made from those big balls, but coloured green
