(This is not the Seller I purchased mine from as they seem to be no longer available)
I wanted to make Nixtamalized corn at home, so I could grind it to make fresh Homemade corn Masa but I needed something that would grind the corn to the right consistency. After a lot of research I decided that the Victoria Corn Mill was the machine for me.
Here I unbox it and show you how it all works.
Check out the video where I make Nixtalamised corn • NIXTAMALIZATION - How ...

I’m in the USA. I occasionally use my mill to make peanut butter. It’s not super smooth but when I roast the peanuts immediately before grinding, it makes the most wonderful peanut butter. You should experiment a bit! The burr plates are a bit of a mess to clean up. Good tip there on oven drying, I’ll start doing that.

I can imagine. Peanut is mighty sticky thanks for sharing the idea. I like that you make it after roasting, if you get it just right, it'll add a richness. Thanks

Steve, to get a fine grind for masa harina, did you have to run the nixtamal through twice, or was one time good enough? I have read where it take 2-3 passes before it is ground well... but that was on different models.

This is tined cast iron. A stiff brass brush on the cones should remove any loose matter. Then use half a cup of popcorn to polish it further.

Steve's Kitchen I was thinking (Danger!!), I remember the Victoria name on some Depression era food equipment. I think my mom still has two. Nothing like this model. This model can grind horseradish and many more spices that are semi to completely dry. It is ideal to completely clean the item and treat the metal parts like a cast iron skillet... Even the pretreated skillets get stripped and treated with lard, beef tallow, or Olive oil (depending on its use). Shortening can work if that's you thing. For lubing kitchen equipment, I use generic conola, corn, or better... peanut oil. As far peanut oil.... It is the slickest oil in the kitchen. It does not like to wash off. THAT is why I use it on my tin ware, baking sheets and pans, and my iron wares AFTER I have them seasoned to my liking. Go give it a try and let me know. I hope this helps some one. Never had any stuck anything. Oh, 200-225F for a few hours and never put in dishwasher! Take care from Oklahoma, Mike and the woman throwing pots and pans at me. OUCH!!!!!!

Thanks Steve, and greetings from Canberra. I'm thinking of getting this Victoria model too - I read its reviews on Amazon, and a lot of them complained about metal shavings in the ground food - did you encounter this problem, and if so what would you recommend to get past it? Also - where do you buy your dry corn grain? I can only find sources with livestock feed companies, and I don't have storage space for feed quantities in my little suburban home. Thanks for your great channel.

Try not to buy the cheap Chinese nock off versions. They feel cheap, easily rust and are more prone to the black residue that you speak of. To be honest there will be occasionally a small amount from any metal grinder like this but the better the quality the less it’s an issue. It’s hard to find grain here in oz but the feed stores you speak of are actually the best source. Find one that sells organic feed and they often will sell it by the kilo and are happy to sell you a few kilos. At least that’s what I have found. Good luck.

Hi. I got a lower cost grinder like this from China. I just ground my first batch of masa and it is discolored in places. I believe from very fine metal shavings from the grinder. I tossed out the masa that showed signs of this. Hopefully, the grinder is done grinding itself and my next batch of masa will not have very fine metal shavings in it. Would be nice to be able to get a pumice stone grinder with a motor.
@Steve-Owens
@Steve-Owens 3 жыл бұрын
Yes those Cheaper Chinese made Mills can be a bit like that, firstly the Machine oil and then some metal abrasion but in truth even the better ones have a element of that, it'll get better with use. Good luck

@@Steve-Owens It was too much. I dried it an oven that was pre-warmed on lowest heat and that made some coating on it come off on my hands. I gave up and returned it. Whatever was on it seemed like it would never come off completely. Hopefully I can find something better so I can make my own corn tortillas.

Hello from TN, USA! I would like to comment on How the package arrived damaged. It happens here all the time. I think part of it is associated with the Postal Service. It seems like they have to tear into every package! I have no idea why! I get very tired of my packages being in Shambles when they arrive at my mailbox. You are NOT alone in getting damaged goods. I ordered Sweet Potatoes slips. The box came FedEx. It looked like it had been squeezed like an accordion! It also had holes in it that looked like someone had Stabbed it with a PITCHFORK!
