Growing up I’d wait all week long for Saturday mornings when my grandma, or Ba Ngoai, and me would binge-watch cooking shows on PBS like Jacque Pepin and Martin Yan’s, and we’d get so inspired, and cook up a storm the rest of the day! One of my favorite memories was when we’d make Xiu Mai, or Vietnamese Meatballs with her and my mom after a tv marathon.These are not the kind of xiu mai you get at Dim Sum, they’re steamed and simmered in a sweet and savory tomato sauce. And we ate them with a crusty Vietnamese baguette to soak up all of the yummy juices. Doesn’t that sound good? Well today I’m going to show you how to make your own.
Vietnamese Meatballs Xiu Mai Recipe:
Ingredients:
1 28 oz. can crushed tomatoes
1 tsp soy sauce
2 tsp kosher salt
½ tsp sesame oil
1 pound of ground pork
2 tsp of cornstarch
2 tsp of sugar
3 tsp of fish sauce
1 tsp of oyster sauce
1 tsp of sesame oil
fresh ground pepper
½ a cup of jicama
½ cup of yellow onions
½ cup of frozen green peas
Preparation:
First, I’ll start with my tomato sauce. In a heavy-bottomed stock pot I’ll add in 1 28 oz. can of crushed tomatoes, 1 tsp of soy sauce, 2 tsps of kosher salt, and ½ tsp of sesame oil. I’m not adding a lot of different flavors into this sauce right now because it’s going to come from the meatballs later. I’ll mix it up and put it on medium-low heat to simmer while I work on my meatballs! In a mixing bowl, I’ll add in 1 pound of ground pork, 2 tsps of cornstarch - this will lighten up the texture of the meat, 2 tsps of sugar, 3 tsp of fish sauce, 1 tsp of oyster sauce, 1 tsp of sesame oil, and some freshly ground pepper. Now comes the fun part - we’re going to add a little bit of crunch and a little bit of intrigue to the meatballs.
I’m going to mince ½ a cup of jicama and add it to my pork mixture. Jicama is a root vegetable similar to a turnip but it has a sweet crunch similar to an apple! Next, ½ cup of yellow onions that i’ll also finely mince to add a savory touch, and finally ½ cup of frozen green peas to add color. I’ll mix everything together with my hands and start rolling them into meatballs.
Once I’m done with that i’ll put the meatballs in a heatproof bowl and place it in my bamboo steamer. Usually when I make meatballs, I bake them. When I bake them, a nice crust around the meatballs. The Vietnamese way, for this, is to steam them and it helps make a delicate meatball that’s nice and juicy!
I’ve already added water to my wok so now I’ll place the bamboo steamer on top and turn the heat on high and let it steam for 15 minutes to cook the meatballs. Once the meatballs are ready, I’ll just transfer the meatballs and its juice to my heavy bottomed stock pot with tomato sauce. The meatballs are cooked through and released a broth from the steaming process. This is what’s going to add all the flavor to our tomato sauce. I’ll let it simmer for another 10 minutes and then it’s time to serve!
The way we ate these xiu mai growing up was in a bowl topped with chinese sausage and some cilantro but now i prefer mine with just the sprig of cilantro and of course with a crusty baguette to soak up all that juice. I’ve also seen Meatball Subs at Vietnamese sandwich shops where they add meatballs to a Vietnamese baguette with some cucumbers, pickled daikon and carrots, and cilantro, and voila! They’re all delicious to me. Let’s have a taste.
The Xiu Mai’s are so flavorful and juicy, perfected with the sweet and tangy tomato sauce. This is such a special meal that my family used to make. I hope you liked our family recipe. Interesting how just about every culture has their version of meatballs. Dumplings too. There are Asian pot stickers and then there are Russian pirogies. Small world.

Yum! My mother has made these before, but there was not really a name for that dish. There is another dish like this too, but instead, my mom stuffs the meat mixture (with glass noodles mixed in) between bite sized pieces of fried tofu and continues to simmer the sandwiched meat and tofu cubes in the tomato sauce. So good with rice!

OMG It's so good I can't wait to try it. And beside that I also want to share with you one of my favourite vietnamese dish : steamed rice rolls with mung beans, fried scallions, pork rolls, bean sprouts, fried breads and the spirit of the dish: the sauce. It's really really delicious!!!. You should try it. You're gonna like it be sure

you reminded me about the breakfast with my family :) Xiu Mai dishes my mother's homemade sauce and seemed looser canned sauces. We choose fresh tomato, chop it and cook with chopped garlic. You can add some water to make it looser. Beside, we add some chop mushroom, chop yellow onion and chop carrot in meatballs. The most important thing is to add a little sauce on the meat will make it so much better

you are wonderful! my family tradition is galumkis...pronounced gawumpkys.... haha... polish pork and rice stuffed cabbage. the trick is you add a little cinnamon to the filling. soo good 😆

I love it when my dad makes this!! Ours a little different though. We add a can of pate into our meatballs. It makes the meatball more delicate and tender. I guess each family has their own way xD I like the ones you use to get at Saigon noodle hose (the one on story road in San Jose) and theirs was just steam meatballs but it just fell a part and it was soooo good.

The only ingredient I couldn't find in the UK was the jimica 😕 so I'm substituting it for an apple. hopefully it works out ok 😄

My version is to make this without the tomato sauce. I place each meatball into their own small bowl, top it with lap xuong Chinese sausage, and crack an egg on top. Individually steam each meatballs in their own small bowl. The juice from the meatballs will come out. Eat it with a French baguette or French bread dipping into it.

I dig your version. I grew up eating the meatballs all piled up and steamed with no tomato sauce. I never knew tomato sauce was a thing until youtube and every video shows meatballs with the tomato sauce. I loved eating it with baguette, too, the juice was out of this world.

Her recipes are really detailed and thorough and she has several Vietnamese baguette recipes on there along with other savory Vietnamese dishes. Every time my big family comes together at my grandma's house, we'd always have egg rolls, some sort of dessert / che and homemade rice or noodle-based main dishes. It has been awhile since the family came together...For me, was Thanksgiving was the last time I saw my family (couldn't meet for Christmas because of home business). But, a family "tradition" (I guess), is that my mom and dad would make us homemade chicken / hot wings / drumsticks, every weekend and THEY ARE SO GOOD. xD that's about the only tradition, next to making mochi ice cream and (pandan) waffles ^0^

I want to make this but I don't have a steamer to cook the meatballs. Is there another way you would recommend me trying? Can I cook the meatballs in the sauce? If so, for how long? Thanks :)

I love all your Vietnamese recipes. They look so good. I want to make them so badly but I'm so terrible when it comes to cooking. I tried to practice but my parents always said I will burn down the kitchen and wouldn't let me do anything 😢I wish I could be like you. And I love your accent. Could u speak more Vietnamese when you're doing a vietnamese recipe? cuz I really love when you're talking in Vietnamese. Well, I'm off now. Great recipe though.

I love eating this growing up. However, I don't recall my parents putting it in tomato sauce. We just steamed one big gigantic meat clump (either that or the meatballs melded together into one gigantic lump) and all the juices would come out. It was delicious! We didn't add jicama or peas (I know you wanted to add the peas for color). I'd just break off little chunks of baguettes and dip it into all that fatty juiciness and break off a chunk of meat to eat. So good! Duong, I know sometimes you do things the "modern" way like using canned tomatoes, but I think it's a good idea to explain that traditionally they are made with fresh tomatoes and maybe you didn't use it for a certain reason. I think for those out there whom aren't familiar with the cuisine or recipe, it's an opportunity to teach so they aren't misinformed and think something is traditionally made when it's not necessary true. Just my 2 cents. I still think you're awesome and love our videos. :)

+Doodah Gurl To be honest, this is exactly how my mom made it so I didn't want to change a single thing! I've never had xiu mai with fresh tomatoes so didn't even think of it. Every family has their own way of preparing a certain dish - like yours was different without the tomato sauce. But that's the great thing about cooking, there's no one right way to make a dish and everyone interprets it differently. If people want to use fresh tomatoes or not add it all, I say go for it! I always encourage people to experiment and make it their own. I appreciate the thoughtful comment. Always welcome a good conversation 😊

That's true, but I highly doubt traditional Vietnamese cooking would use canned tomatoes - that's just not a product they have available - especially with the abundance of fresh vegetable they have to use. I'm not saying my parents are traditional in all things, but I've watched other people make this on youtube and every time, they used fresh tomatoes. It's the same or similar sauce used to cook the fried fish in or the tofu (either stuffed or not), so it surprises me to see this...

My mom use to make a dish she called TOMATO SOUP. But it was made with a can of crushed tomatoes,frozen gumbo vegetables ,corn ,onions , and any kind of leftovers in the fridge. I like to add potatoes and carrots, and a can of pinto beans . You can make this vegan. But I'll usually add either ground beef. Or stew meat. Needless to say this is a one pot meal . All you need with it is a slice of bread. I never add garlic cause I don't want it to taste Italian. Usually just black pepper. And some Worcestershire sauce. I make this all the time cause it reminds me of my mom.

I think own homemade tomato sauce will be better, another twist is that stuffing meat ball into tofu. Anyway, i love what you are doing. So proud to see such a talent girl cooking Vietnamese dishes.

+Honeysuckle yeah it might be bun bo, one of the most famous in SG. There're plenty versions of it: bun thit nuong, bun cha, bun rieu, bun oc, banh canh cua, bun vit... One secret, cho Ben Thanh is not the best place to serve street food. If you come to VN soon, i will certainly show you the street food heaven lol :))

My mother does a similar but instead of making the meatballs she uses storebought swedish meatballs xD

Please try using fresh meat and veggies instead of frozen one thats what we do in India I am sure the taste will be better

+Siddhesh Nanal Thanks for your input. I assure you the meat I use is always high quality and fresh. I have personal standards for my cooking. As for tomatoes and peas, yes I agree fresh is always best, but unfortunately tomatoes are not in season so wouldn't produce the best sauce anyways. We also have quite amazing organic canned ingredients here in the US. 🙂
