My friend Vincent came to America 50 years ago and opened a couple pizza shops right away. His pizza sauce for his business came from an Italian vendor called Bova. Because he made over 100 pizzas a day more on weekends, he had to go that route for the pizza sauce. The thing is, he did something to it to make it his and it was awesome. He doctored up commercial pizza sauce and got it right for the next 40 years. Sadly he’s passed on and Vincent’s Pizza is no more, but we ate good for decades thanks to Vince.

@@vincenzosplate - Without a doubt, the best pizza I ever made. My own homemade sauce, extra thick crust and crispy on the bottom. I cook pizza in a pan. About a tablespoon of olive oil keeps the dough from sticking and gives you a crispy bottom.

This is great, here in bolivia we dont get san marzano tomatos, and our tomatos are very acidic, here the solution i found is cooking it, but do you have some other advice?

If you don't have San Marzano tomatoes and your local tomatoes are acidic, you can try roasting the tomatoes, adding sweetness, using a pinch of baking soda, or blending with milder tomatoes to balance the flavors. Adjust the seasoning and ingredients accordingly and be open to experimentation to find the perfect balance for your sauce.

Hei. Ive tried this and it tastes awesome. No words. The only issue i had is that i had wattery pizza. Did i make a mistake? Can you help? I only used a little water when washing the peeled tomato can that i used. Maybe this was the issue? Baked the pizza in the oven with a stone and the recipe for the dough was Lucio's. Amazing again. The canned peeled tomatoes are from a brand called Russo. Hope you can reply and share some tip. Cheers

The accents are delightful. However they're nearly impenetrable, so I've had to turn up the volume and watch twice. It was worth it! And of course you don't cook or simmer. After all, it's going on a pizza into a 450 plus degree oven which is enough to cook most anything. Where I live I cannot find fresh basil, so it's the dried store-bought stuff. Also I totally (TOTALLY) agree with the finger method of blending!!!!
