Can you do the whole process with the disk on? Like could I use the cake comb and then fill in the stripes and scrape and then take the disks off? Would the crispness of the whole cake and icing look the same?

Thank you for the question. Unfortunately I cannot give you a definitive answer. It's all up to how tall your cake is and if the disk will happen to fit into a "notch" or indent in the cake comb pattern. If the disk lines up with a tab instead of a notch/indent in the cake comb, you won't be able to use the comb. You could measure your comb and make sure your cake is the exact height where the disk will line up with an indent. We find that if you use the disks, remove them, and chill your cake for at least 1 hour it's stable enough to use the comb while keeping your sharp sides.
