I love the consistency of your buttercream!!! How do you get it so thick ? Or do you keep it frozen or refrigerated?

It’s American buttercream! We keep it at room temp and mix a full bowl on the mixer for like 10 mins or so to get it silky smooth. Low - medium speed!

Are your cakes frozen when you frost? Were they frozen and then defrosted b4 frosting? Do you defrost in fridge or counter? I'm so worried I'll mess up my cake lol

We freeze the cakes to set the filling layers! They can be iced frozen but you need to work fast or else your buttercream will start setting. I like to keep them at room temp for 5-10 mins before masking them :)
