I am now cracking my 6 month old waterglassed eggs. I rinsed them well and cracked into bowl. They smell fine but the whites were runny. I scrambled them and they tasted fresh but were a bit foamy. I just ate them and am waiting here to see if I die. Lol! 🤣

I love to learn about these things. It shows how perfectly God created the world. Even giving chickens a time of rest, to keep them healthy and preserve the quality of the eggs 😊 (and to not have a chicken plague when chickens are with a rooster and would recreate year round 😋) I guess it's another reason why eggs from the big industries are so bad, the chickens are forced to lay eggs every day 😕 Which is horrible for the chickens and actually harms our own health as well. Anyway, thanks so much for your valuable tips!

Water glass is sodium silicate. My grandmother preserved her eggs with it. Lime water is a different thing, but it also works. Most sources say lime water keeps eggs well for about 9 months, but water glass (sodium silicate) keeps eggs for 2 years. That said, a sealed wooden keg of lime water preserved eggs was discovered on a Dutch sailing vessel wreck and they were still usable after 100 years. The article didn't say what effect being under the ocean had on preservation of the barrel of eggs.

Love this idea!! And I like the idea of the 1 gallon buckets vs a 5 gallon. I look forward to trying this when we have eggs again!

I water glassed eggs for the first time last year too per your suggestion and had a great out come!! So thank you and you are so right about the 5 gal bucket. I never had mine full, so no cracked eggs on the bottom, but still didn't like having the first preserved on the bottom. So I definitely will be looking for smaller buckets. Thank you for the idea!! I will continue to listen for updates, and hopefully will someday learn where I went wrong with my water glassing attempt. Some of my eggs were good. Many of mine cracked even with small buckets and not moving the buckets around during storage. . Also some of the eggs tasted of the lime. Very curious as to what I did wrong! Best of luck and keep sharing all your wonderful content! This year I’m going to try freeze drying my extra eggs! 🤞🏼

We’ve been told to use Distilled water and keep the water glassed eggs in a dark ( out of bright light) /cool location. We concur on using smaller containers and, not 5 gallon buckets. Thank you for sharing your method and your experience with water glassing eggs. We hope to preserve more this year. We buy farm fresh eggs from a friend @$3 per dz. We’ve been buying a few extra dozen w each order to use to water glass. It’s something we can do to make sure we’ll have some fresh eggs. Susan

Great tips in case I ever do need to preserve eggs. Although we do run out occasionally, we mostly have enough or extras. Here our chooks tend to take a short break in the heat waves in summer then again with their moult and start of cooler weather,but it is only short. I keep a few breeds minimum, and between them there is usually someone still laying. When we lived in a temperate area ,my chooks did have a more defined break though. Fantastic tips. Xxoo

Thank u SO much for info on "wimpy" egg yolks. Bought mine from a local & decided to try a couple after 6 mo's & had same problem. Smelled good, etc...but wide spreading white & yolk (flat) & when I flipped them, yellow broke. But. tasted great & glad to hear some may be this way, but still ok.

The tip about the smaller container is gold. I was looking to buy a five gallon bucket to do this, but after hearing your video, i changed my mind. That makes so much sense. This is my first year water glassing. Thank you for your video. New subscriber here.

I had eggs break iny 5 gallon bucket 😭. I'm not sure if they are still ok. I'm not using a 5 gallon bucket again.

Popped over and added Cal Lime to my next Azure order! I was definitely on the fence, but I'm so tired of bleh scrambled eggs during the winter (we freeze our extras right now). And here in Maine, my egg "flush" is just starting...so it's perfect timing! Thank you for sharing your results (and I'm sure my family will be thanking you in January 2022, lol). Apologies in advance Jessica, as I wouldn’t want anyone blaming you for their error. Some viewer may think that all eggs can be water glassed/preserved. STORE BOUGHT EGGS CANNOT / Shouldn’t be Water Glassed as they’ve already been processed, often with bleach. Hope you’re not upset with me mentioning this 🙏🏼, but the idea could be new to some. Hello Jessica, thank you for sharing this. I have done this for the first time last year and it was a great succes! But what to do with the water now? I used calcium hydroxide, that's the name we use here in France for pickling lime. Thank you very much and have a nice day! Greetings from France

Add 1/8 tsp salt to each scrambled egg and freeze. Helps prevent the gelatin like texture. Now I have only used store bought. They worked great for baking. My husband said it tasted fine when I cooked it for him. I do not eat eggs.

I have also frozen eggs whole in the shell. The shells will crack so put them in a bag. To use let them thaw just enough to get the shell off. It will be a frozen whole egg without the shell. Then let thaw to use for baking.

Thank you so much for the very useful information! I'll definitely be trying this at our homestead this year. Just wondering do you know if I can use this same method for my non chicken eggs? For example besides chickens I also have ducks and guineas. Every time I look something up even on chickens I've only found the freezing method.

Yes. You can use it on any eggs. I just don't with my duck eggs because they are always so filthy.

We've only gotten lucky by not having dirty duck eggs because for some strange reason the past 2 years our ducks started laying them on our small dock area at our pond. Last week we ended up with 91 duck eggs total and I've been researching like crazy trying to figure out how we can keep them from going bad. There's only 3 of us in my family so we have given a lot away but I still have 4 dozen left and I don't want to waste any. I'm so glad I found your channel a few weeks ago because you're so knowledgeable and I continue to learn something new from you in every video. 😀

I have some water glasses eggs. I bought them at an egg farm. I got them freshly laid, with the bloom intact, unwashed. Every month I cook some to see how they are. I put these in a bucket of water, with enough to fill it up with the eggs. Then stirred in some Hydrated Lime. THEN I carefully dropped the eggs into the water, keeping the water over the eggs. I covered the bucked and put then in a closet. I just now tried one, which I do every month. Today, the whites are a bit thin and the yolk is somewhat flatter than normal. but it tasted good with no funky taste. It was fine. I put six dozen away in March 1st, I ate some every couple weeks until I felt they would last, I have 4 dozen left. Not bad for unrefrigerated 5 month old eggs!

I preserved one doz and 2 days later there must have been a hairline crack in one egg and the yolk came out. I decided to extract that cracked egg and redo the lime and water. Was it necessary to do that or would it have been ok to leave the cracked. Looking for direction being this is my first attempt at preserving eggs. Thank you so much for an excellent video.

Hi Jessica! I can’t seem to find this answer anywhere, and am sorry if you’ve already answered it! When I water glass eggs one at a time as I get them from my hens, do I need to stir up the separated lime when I add more in, or can I just put them in? Just wondering because it seems like a lot of the powder is separated and I did not know if it would still preserve the egg? Thanks so much!

Hi Jessica, I'm new to your channel and loving your videos, I went back about a year. I've seen another utube homesteader do an experiment with cooking up frozen v freeze dried and the taste test she said the freeze dried was almost the same as fresh. On another note you should check out Venison For Dinner, Kate is very similar to your self with a large family and cooking from scratch. You are both amazing mum's keep up the great work.

I have been collecting eggs to try to do this but I have kept them in a refrigerator (with bloom still on). We live in a camper but about to move to our house so I’ll have space to keep them on the counter 😅 Can the refrigerated unwashed eggs still be used for water glassing?

Very interesting! Now I do have a few questions....We live in Togo, West Africa...and I wonder: do you know if storing eggs this way in a very hot, tropical, climate, would also work?? Could you share the exact name of the lime substance you use....so I can see if I can buy it somewhere? Thank you in advance!

I did egg glassing once. All of the eggs came from one person. Most of the shells seemed more easy to crack than when they were fresh. I also had a few egg yolks that broke easily but they tasted fine.

I just started a couple dozen of water glassed eggs. I'm so apprehensive of the method. But would you recommend trying one after 2 weeks or more in solution just to try and see how they are progressing

Have you thought about dehydrating eggs?! For scrambled eggs, it works wonders and you preserve them in a jar

Do you reuse the lime water year after year after eggs are used up. If yes, how many years can you reuse it? If you can't reuse it how do you dispose of it if you don't want to dump it down the sink? Thank you!

Thanks Jessica! I'm here in New Zealand and homesteading groups talk about getting lime just from a hardware store to use for this but you talk about using food grade lime.... I haven't been able to track down food grade lime here in NZ, do you know if there is a difference? Don't want to poison my family 🤢 Thanks again for your great content😊 ~Janie

I know people who use garden lime without issue. It is whatever you are comfortable with.

Hydrated lime is what you use. It's used in concrete. Garden lime is a different animal.

Going to guess this would not work on a sailboat…which is constantly rocking all about. But if it did, it would be great for long term cruising sailboats.

Can you waterglass the eggs then dump in big bags of salt to bury the eggs so they are packed and nestled between the salt to help prevent cracked shells?

Quick question. My parents gave me 5 18 packs of eggs.. my dad said he lightly rinsed the dirt/poop off of them. They are just a few days old. My question is.. would it still be ok for me to water glass these eggs since they have been lightly rinsed and are a couple days old?

Also regarding storage, does keeping them in sunlight (get warm) mess it up? Maybe a dark place would be better?

Dark is always better for long term storage, but if you plan on using food in the short term it isn't a big deal.

I just got 40lbs of garden lime and now I'm worried it won't work. Is it the same? If I wash the eggs off before using them will it get in the egg?

My husband has been wanting me to try this. My question is how old can the eggs be before glassing? Can i save up eggs for like a week or do they have to be glassed the day of collecting? Also can you reuse the lime after the eggs are gone?

One thing I don't seem to hear about when water glassing is how long do the eggs last once out of the solution? Is the bloom removed from the solution that they sit in? I haven't seem this covered In other videos on KZfaq.

Typically you would use the eggs up immediately. I wouldn't store them outside of the solution.

I was learning about this today, and another gal mentioned to not use city water, either purified water, or even distilled water.... Hmmmm. And to me this kinda makes sense, since all water for different facilities and parts of the country could affect it possibly?? Idk 😶

You can collect them for a week or so and then preserve.

I put up 150 eggs back in April of 2023. Started using this month. Questions:1 : When I crack them the sort of "Explode" and the whites go everywheres. 2: the yokes all seem to break when I place in a skillet to fry, ben making scrambled instead. 3: When I boiled a dozen, 10 out of the 12, all the shells cracked. Any comments that I might have done something wrong back in April or is this sort of normal? . They smell fine, and I've eaten them and they are tasty and no ill effects. Thanks in advance. So the eggs can have poop on them? The reason I’m asking is that one lady said they need to be clean but unwashed. I didn’t wash mine and used them anyway. I mean they have to be washed when you use them, right?

Can you use a soft brush to delicately get the dirt of?!? The place I can get fresh eggs from has exceptionally dirty eggs 😅

You can brush off solids, but just don't use water to wash off the bloom.

I had some eggs break in my solution. Do I need to throw the whole bucket out or just wash the eggs?

My ducks lay outside and then cover their eggs, they look like the big ice cream bowl you have of dirty dirty eggs, I wash them and then within a week I dehydrate them, dehydrated eggs or better yet if you can afford it freeze dried works even better. They rehydrate either way after powdering. Works great for scrambled, omelets, or baking. Just a thought.

A quick return question. A year later I have opened up and cooked the 8 eggs I trial stored by this method. One WHOLE year. They were still perfect. :) The follow up questions. Now the jar is empty of eggs, can I still use the jar of water/Calcium hydroxide for the next batch of eggs (ie re stir to get all the white stuff off the bottom) or should I start a fresh jar with fresh water, fresh calcium hydro?

I have read that they can last up to 18 months in there.

What if you find a cracked egg? Do you throw all of rest away? We got our eggs out and put them in a glass jar and put bless Lyme water… is that safe?

Can I buy unwashed, refrigerated eggs from my neighbor and water glass them? Does the refrigeration before water glassing prevent the ability to preserve them this way?
