Jacque Torres waits 24 hrs before baking his chocolate chip (only) cookies. I realized seeing him at least 20 years ago he once touted 36 hours of hydration. Recently he visited Rachael Ray & has reduced dough rest to 24 hrs. What do you think of these extended rest times?

Which one is the most like Davids Cookies (from the store) in the 1980s? That's always been my favorite. Cooks Illustrated is similar to Bon Appetit and Ambitious Kitchen in that they have a lot of egg yolk and brown sugar. I like them all but still none match Davids which was crispy buttery and chewy all in one.

🤷‍♀️ I'm confused. I just clicked the link for Butternut Bakery recipe, and it is different from the ingredients shown at 12:18 and from what is stated are the ingredients. It is showing 1 3/4 cups All purpose flour. (Not bread and cake flour, as I believe is stated here, as well as shown at approximately 12:18) I must say that this is quite disappointing. 😞 I am wondering how many of the other videos show varying recipes from what was verbally described here as being the ingredients.
