Good explanation!! The thing is a tried this morning a coffee (Carbonic Maceration) on V60 and it was so light, almost no sweet flavor. So i´m gonna tried it on french press and i'll we see how it goes

Are there any advantages of using CO2 over other inert gases like nitrogen? I would guess that the reduced pH that the carbonic acid is imparting changes the fermentation but it might be interesting to see what nitrogen does to a cup (lower acidity maybe?).

is corbonic maceration less expensive to produce

the contrary, storage and processing makes it more expensive than other methods except fermentation.
