I think it was politically smart for Rhaenyra not to kill the white hart as well. Even if she had been the one to present it to the hunting party, Ser Otto would have still twisted it to Viserys saying that it was captured on Aegon's name day and is still an omen for him.

I think the scene of him killing the deer is representative of his decision to allow his wife to die, in an attempt to have a son. Both are held captive and murdered at his hands. The white stag represents Rhaenyra's desire for freedom.

its an elk! not a deer and cole brings his sword out without asking to kill it but rhaenyra says no !
