@@jamesgamblin3488 It is true. It was said about the famous physicist Julian Schwinger that he publishes to show you that he is the only one who can do it. Not a good idea.(Although he was very approachable apparently on a one-on-one basis). I suppose that Chef Jean-Pierre must have experimented in simplifying some recipes for his channel. This guy has done more for my 19 year marriage than buying diamonds for my wife. I've invested in some good pots and I'm cooking away. Just crazy how helpful this has been for me - from the normal grilling stuff on the weekends to cooking 4-5 days a week now. and it is fairly easy if you'll cut you stuff up days before. It takes me less then 30 minutes to make any of his Salmon dishes - and I ate that tonight again with the mustard sauce.

Dearr JP- the 3 important things I learned that improved on how i learned it from my mother: 1. sauteed pot bacon and or ham or both onion veg separate, then egg mixture smooth with cheese challot/garlic/hot sauce/and cheese. 3. mix them together and then return this mix to oiled hot pan to create the crust--finish in oven 4. the towel technique to flip with out a miss---saved me from disaster. YOU ARE A GENIUS! LOL

For me, I like to see 'mistakes' especially since Chef JP doesn't edit out what he calls 'mistakes'. I see this as a learning opportunity and honestly, I'd be quite happy to see more of how to correct various mistakes because we all know we WILL make them! For instance, I made the delicious French onion soup recipe, cutting it in half. However, I did Not cut the amount of flour/butter for the roux in half. I tell you, somehow I had enough blonde roux to make a few gallons of soup, lol. I didn't know if I should just remove some of the roux before adding the stock (didn't seem like a good idea because too many ingredients were in it), or just add more liquid (which is what i did). Fortunately, I had just enough stock in my freezer to make it work, although my onion to 'soup' ratio was off - but it was very good anyway by some miracle. I now have French onion soup in my freezer to last the winter, lol. Anyway, I am never disappointed to see a mistake and learn how to fix it. TY as always chef for another amazing recipe!

All right then! Made my very first Frittata change the Recipe since I only have a 9.5” Woll pan. Lots of prep ( start to finish eating) two hours. Some things I would change on my next one. 1/3 the potatoes and cook them ahead of time. Less cooking of ingredients I believe I over cooked them because of the potatoes. My wife and I loved it but still to much, so I vacuum packed and froze the balance (expect one piece for breakfast) Thank you so much for all the hard work. P.S. A friend of mine never watches you tube videos. I sent him one of yours on I believe was Salmon, he has made it for everyone and can’t get enough of your site..he loves you humor. 🙄 Again thank you.

This has skyrocketed to the top of my ‘favorite egg dish’ list! I omitted the broccoli and added poblano peppers instead (because everything is better with poblanos!) and I used portobello mushrooms (I love the flavor of portobellos!)I served it with a creamy cilantro sauce I make. This was simply fabulous! It was easily worth the time it took to prepare everything, cook the bacon and veggies, and bake the frittata. It took about 2 hours total and it was definitely time well spent! Thank you Jean Pierre, thank you so much!

Broccoli on top is good idea. Everyone gets a piece. Also good tip on adding eggs to cool mix.

I can’t tell how much I enjoyed this Video and the tricks because I make this for my wife who loves this once a month without fail and to tell the truth I’ve been making it the wrong way.it comes out nice and she enjoys it and I do too but your way is fantastic and I can’t wait to make it the way you make it tricks and all. Thank you so much I’ve made some of your recipes and there always a big hit with the wife and family and friends.

I've rewatched this numerous times. I have to admit that I still haven't made this yet... despite being an avid egg lover. Today, I just ordered a non-stick pan. I don't have any by personal choice, but I feel I will need one for this. It will be named my frittata pan. I imagine it will last many, many years since it will never be touched by a utensil, just many future frettatas. And some cleaning too of course.

Chef JP, I absolutely love your videos! I've tried many, all wonderful...including your "old" broccoli & goat cheese frittata. I've made it 3-4 times, always a HUGE hit. Can't wait to try this one. Thanks for all you do and keep the vids coming!! You make Mondays and Thursdays much more fun :)
