We had so much fun this week because it was our first week of Subbie Supper! Thank you to everyone who sent in recipes! We have so many great ones to choose from. Don't worry if your recipe wasn't chosen, I've got them all saved and I'll be picking another one this week! TORTILLA LAYERED CASSEROLE:
4 8-inch tortillas
1 can refried beans
1 1/2 cup salsa
1 pound ground beef, browned and seasoned with a packet of taco seasoning
1/2 onion, chopped and cooked with ground beef
1 cup corn
2 cups shredded cheese
In a lightly greased 9 inch pie pan, place one tortilla. Spread with 1/3 of refried beans and 1/3 cup salsa. Sprinkle evenly with 1/3 of the meat and onion mixture, 1/3 cup corn, and 1/4 of the cheese. Repeat layering twice more, ending with tortilla. Spread remaining salsa and cheese on top. Bake for 25-30 minutes at 350.
GREEK CHICKEN RECIPE (from She's in Her Apron):
4 boneless, skinless chicken breasts
1 tbsp olive oil
1/4 cup Greek Vinaigrette dressing
1/4 cup chicken broth
1 onion, chopped
1 red bell pepper, seeded and sliced
1 tsp dried thyme
small can sliced black olives, drained
1/4 cup feta cheese
Season the chicken however you like. Heat oil in pan over medium-high heat. Add chicken and cook until browned on both sides. Add in Greek dressing and chicken broth. Blend and simmer for 3 minutes. Add onion, thyme, red pepper, olives and feta. Cook until veggies are tender and chicken is done. Serve over rice!
ONION ROASTED POTATOES:
2 lbs red potatoes, cubed into 1-2 inch pieces
1/3 cup EVOO
1 packet dry onion soup mix
Preheat oven o 450. In large bowl, add all ingredients. Toss until potatoes are coated evenly. Empty bowl onto a large baking pan covered with aluminum foil (spray with non stick spray first). Bake for 40 minutes or until potatoes are tender.
CHILI CON CARNE:
1 medium onion, chopped
1 - 1.5 lbs lean ground beef
2 tbsp. veg. oil
16 oz can of diced tomatoes
8 oz tomato sauce
1 cup ketchup
16 oz can of chili beans (or kidney or pinto beans)
1.5 tbsp chili powder
1.5 tsp salt
(dash of red pepper flakes for extra spice if you want)
Brown onion and beef in oil in a pan/skillet. (Drain ground beef if needed). Add beef/onions, diced tomatoes, tomato sauce, ketchup, beans, chili powder, and salt to a 4 qt pot. Stir well, simmer covered for 1 hour and 30 minutes. (Add water to thin out if you feel it's too thick)
CORNBREAD RECIPE:
Preheat oven to 425 degrees F.
2.5 cups self-rising cornmeal
2 eggs
1/2 (half) cup Crisco shortening
2 tbsp Crisco (to grease skillet)
2 cups whole buttermilk
Heavily coat skillet with 2 tbsp of Crisco and set aside. In a large mixing bowl, mix together: cornmeal, eggs and 1/2 cup Crisco; using a pastry cutter in a downward circular motion, until mixture resembles coarse crumbs. Add buttermilk, mix with fork until well blended. Pour into the greased skillet. Place on bottom rack of the oven. Bake for 25-35 minutes or until bread is golden brown and the sides have pulled away from the pan. Remove from oven. Shimmy pan to make sure the bread is loose. While hot, flip bread onto plate. Slice and serve!
SUBBIE SUPPER RECIPE!!!!! BURGER BUNDLES:
1 cup herb stuffing mix, made according to package directions. (I use Stove Top brand)
1 lb ground beef
½ cup evaporated milk
1 cup cream mushroom soup
2 teas. Worcestershire sauce
1 tablespoon catsup
Prepare stuffing according to directions on package. Mix ground beef with milk and divide into 5 patties. ( I usually flatten them on wax paper to about 6 inches in diameter) Divide and spoon stuffing onto the center of each patty and then draw edges together to cover the stuffing. They will look like fat logs or sausages. Place them in a 1.5 quart casserole.
Combine soup, Worcestershire sauce and catsup in a small saucepan and heat until bubbly. Pour over the meat and bake uncovered at 350 for 45-50 minutes.
BROWN RICE:
1 can French Onion Soup
1 can Beef Broth
1 cup white rice
Combine all in 2 qt baking dish and bake, covered for 50-60 minutes at 350.

Mandy, I'm so glad y'all liked my recipe and hope it will become a family favorite for many of your subscribers. My husband and I both watched this and he said, "When are you going to make them again?" I don't think I've made them since the holidays last year, so it's time! I never taught my son to cook but he learned a lot from a friend and now he really impresses me. He likes most food so it's not hard to cook for him. He makes an awesome chili. So nice to see your son helping. We both have an awesome son!!

I made the burger bundles and brown rice tonight. They were so good. My husband kept saying “ it’s delicious “ the whole time we were having dinner 👍🏼👏😉 Thank you for another amazing recipe. Tomorrow im making the greek chicken and the red potatoes. So excited. 😊

Fun fact... last night our family ate at Brixx and my son wanted to try a red pepper flake. He tried one tiny flake and started chugging water. My mom used to make “brown rice” all the time when I was younger and now I make it for my family! We toast up the rice first in a skillet with half a stick of butter before adding it to a casserole dish with the soup and broth. So good!!

Hi Mandy!!! I love your recipes ♥️ I'm from Argentina and I try to do some of them at home. It's a little bit complicated because we didn't get some of the ingredients, so I replaced them... I make my own taco seasoning and italian seasoning as well 😊

Mandy, love your videos. One of my grandmother's tips came to mind when you made cornbread. Since you are using eggs, crack one into the measuring cup you will use to measure your Crisco in. Tip the cup around so that it coats the inside of the cup. Pour out the egg(s) and measure your Crisco. It will slide right out. I also use this tip when making cookies, especially for peanut butter in peanut butter cookies.

I have never seen cornbread made like that, but it is obvious it turns out great 😊 i use my grandmothers recipe in my small 6" cast iron. I put a few tablespoons of oil in the cast iron and let it preheat with the oven. Once the oven is heated to 450, I take it out and pour some of the hot oil into my mixture then immediately pour into back into the skillet. It makes a super thick and crunchy crust that way.

Love your recipes! I’ve been making my Mother’s cornbread which is almost the same technique. I heat enough crisco in the iron skillet for the cornbread and to oil the skillet. (Lately I’ve been using avocado oil or olive oil instead of crisco and my Mother and brother, the cornbread lovers, haven’t noticed the difference). I mix the yellow self rising cornmeal mix and buttermilk with a whisk, then pour the hot oil into the mix leaving probably a half a tablespoon of the oil in the skillet (and I keep that hot) and then I stir (or whisk) the cornbread mixture well to cool the oil a little before adding the egg so the egg doesn’t scramble. Then I pour the mixture into the hot oil in the skillet and it should sizzle and start to cook (this makes a crunchy crust which my Mother loves). I cook at 500 degrees and set timer for 20 minutes. I take it out and turn the skillet over onto a plate and the cornbread should come right out. Comes out brown and crunchy. My Mother has certain skillets she used only for cooking cornbread and biscuits and they would come out loose every time without sticking to the skillet. I’ve used the skillets for other things and the cornbread sticks (sometimes letting it sit for a minute after taking it out the oven works or I run a butter knife around the edge or a small spatula under the cornbread).

I'm from NM and chilie here is Hatch Green chilie roasted and added to ground beef and potatoes with sauted onion and garlic. Or Red chile stew made with chunks of stew meat. We make our enchilada sauce from the dried pods. I will be trying yours looks so good. I want to try those burger bundles. Yum.

I was actually shocked when I heard you say burger bundles. We love them in our house,my husbands grandma use to make them and his mom showed me how a few years back ( been together 8 years) they've since become a favorite of mine also.

Great recipes. I use tomato soup instead of tomato sauce in the Chile , also I just use self rising cornmeal and vegetable oil. No eggs. We like our cornbread course and crunchy.

Going to be trying out all these recipes for sure! They all looked good. I've done another variation of the cheese dip. Brown cubed chicken breast add chicken taco seasoning and onion sauted can of Rotel tomatoes with green chillies 1/4 to 1/2 cup milk a block of Velveeta cheese melt down. Serve with tortilla chips. This can be made with ground beef also.

I have that same cast iron skillet that was passed down from my great grandma Lily Gobble. It was her chicken frying pan & its a great treasure. I wish i could send you a picture of her. She was a scotch-Irish tennessee mountain woman who was the best cook around. People fought over her to work as their cook. She also was the mountain herbalist healer woman who dressed in overalls & smoked a looooong peace pipe with her hair in long beautiful braids.She was a rougue and i look EXACTLY LIKE HER. ITS KINDA FREAKY.I have my grandmas chicken fry pan too of the same size, an equal treasure.
