This week enjoy the BEST conditions in paradise - calm, clear waters AND some of the scariest - LIGHTENING! We'll show you where we hide in the middle of no where, far from the safety of a marina.
Levain Bakery Dark Chocolate Chocolate Chip Copycat Cookies
Prep Time -25 mins
Cook Time -10 mins
Servings: 8 -12
Ingredients:
1 cup Cold Butter cut into small cubes
1 cup Brown Sugar
1/2 cup Sugar
2 Eggs
1/2 cup Dark Baking Cocoa
1 cup Cake Flour
1 1/2 cup All-Purpose Flour
1 teaspoon Cornstarch
3/4 teaspoon Baking Soda
1/2 teaspoon Salt
1 1/3 cup Semisweet Chocolate Chips
Instructions:
Preheat oven to 410 degrees.
In large bowl, cream together cold butter and sugars until light and fluffy, about 4 minutes. Add eggs one at a time, mixing well after each addition.
Add cocoa, cake flour, all-purpose flour, cornstarch, baking soda, and salt and stir until combined. Stir in semisweet chocolate chips.
Chill dough for 15 minutes.
Separate dough into large balls and place on lightly colored cookie sheet. Lightly press on top of dough to smooth out. If you have a scale, you can make them anywhere from 4.5 ounces - 6 ounces. You will fit 4-6 cookies on one large cookie sheet. The dough makes 8-12 extra large cookies.
Bake for 9-11 minutes or until golden brown on the top. Let them rest for at least 10-15 minutes to set.

Greetings O'Kelly's , Always nice to bask in the warm glow of O'Kelly energy. If forced to critique, I'd only say that your flying disc is a bit light for beach winds and would recommend a frisbee 165-200 grams. Much Love friends.

Congratulations to Meg from a French gourmet. Stop eating sugar was one of the best thing in my life. First consequence : you finally feel full after a single plate meal. With sugar your always starving, even if your gut is overloaded. I can't remember the last time I felt satiated before I stopped eating sugar. Then the second benefit is I don't need to make any effort whatsoever to keep my wheight. WHAT A RELIEF ! Problem is that now you can't eat any industrial food because there is sugar everywhere. I dicovered 17% sugar in good "traditional" Viennoise Sausages coming right from Austria. Now I have to cook everything from organic raw ingredient and I'm so happy to finaly eat clean. Also I now realise that I can't eat added sugar AT ALL. As soon as I eat something with sugar, I'm instantly starving. Crossing my fingers for you both. (This does not apply to fruits and other natural things containing sugar because the more sugar they have, the more fiber you eat with -look at sugar canes), I learned that the liver does not handle that the same than added sugar at all)

Always a fun time. I gave up sugar and flour (mostly) almost 15 years ago. Your body will love you. We occasionally do rice, pasta or potatoes, but treat it as a condiment, not the major part of a meal. Maybe once a month. It is good for metabolic flexibility. If you get minimum 85% cacao dark chocolate, it is actually good for you....just not in excess. 🙂 Eat more meat and seafood and low card veggies and will stay satisfied way longer. Yea! love it, nothing but quality. I would love to spend a couple of weeks with you guys absorbing all the boating, sewing, repairing/upgrading, sailing and most of all weather forecasting that I could cram into my little brain. By the way I also love to dance and have given up sweets and bread!! If you ever decide to do something like that, Please let me know - by the way I can pay my own way, what fun and life changing that would be. In any event, thanks, fair winds and see you on the next one.

WHY in the Hell don’t you guys have at least 500K subscribers! You have the perfect mix of boat work, practical info and sailing/enjoying yourself. I really hate that the T&A channels get so many subscribers which don’t represent the reality of live-on cruisers like you. If it wasn’t for the love of my life’s FTD we would be out there with you now!

Thank you, you’re very kind. We’ve wondered about the growth as we seem to get plenty of views and very positive feedback. We think it’s possible that due to our demographics, we have viewers on large TVs, where it is inconvenient or impossible to subscribe. It’s not a huge concern for us, really. We are glad that anyone watches and finds value in what we put out there.

Oh Megan, I have a keto chocolate chip cookie recipe that I love-- secret is its a regular almond flour cookie with beef gelatin and hersey's sugar free chips. Also-- pizza cravings can be cured with low carb pizza sauce, cheese pepperoni and spices. I find I don't really miss the bread and I'm good to go a couple months more wihtout pizza.

Another great video guys! Lee Stocking and Brigantines area is our favorite place in the Bahamas too. We cut out flour and sugar 5 months ago and have never been healthier! We don’t miss the sweets and losing a bunch of weight was a pleasant side effect.

Great decision on going full time Keto! After you get your body adjusted to burning fat instead of sugar, you'll loose all your old cravings. As far as treats: Just substitute coconut/almond flour for wheat flour, stevia for sugar and dark chocolate is no problem! I did it to avoid having to go on insulin and high blood pressure medication. Works like a charm! (and as a side effect I lost 40 lbs)

You are right to be concerned about lightning strikes. Our Island Packet 485 was hit by lightning (we were on board at the time). Wiped out everything electrical - radar, chart plotters, batteries etc. The cost to repair the damage. Just over $100,000. Be safe out there!

Sorry to hear it. We are now up to 13 boats we know personally that have been struck. When it happens, it’s a season ended for sure. Sometimes more than a year to get it all straightened out. Bummer!

Hey Nick! You have a tan line across the bridge of your nose. Easy fix! Put duct tape over the rest of your face leaving the tan line exposed. Wait 45 minutes and you’re done, easy peasy. Good luck getting the rest of the duct tape off and leaving your face on. 😂

Hey Nick, just talking about boats and lightning strikes with a buddy, and poof! You’re discussing lightning strikes and keeping a watchful eye! What can you do about it? Try to out run it, kinda hard if your in a Lee shore situation and a thunderstorm is barrelling down on you! What do you do, put all your handheld devices in the oven? But what about all your navigation equipment? Do you mostly just wrap your anchor chain around your mast? Or is that an old wives tale? Perhaps this is a topic for another episode but what do you do to limit your exposure to such events. Especially around Panama I heard, some incredible light shows. Cheers Doug

We’ve talked about it before, but if the storms are severe with a lot of cloud to ground lightning, we will put electronics in the oven and start the engines just in case starter/alternator were damaged by a strike. In this case, it was almost all cloud to cloud, so we didn’t do any of that.

I stopped flour, rice, all grains and sugar 2 years ago. You’re going to feel better and get a handle on weight without any other changes.

I free dived a lot when I was young and I would pull seawater into my mouth through the snorkel and expel it, aver and over - I believe it assisted with my equalization - at least I cannot recall having to take my mask off to squeeze my node. we didn't have fancy masks back in those days. Or at least could not afford them. Very impressive Storm / Lighting footage!

Lightning paths are more complicated and unpredictable around boats than it is on land….which in and of itself is very unpredictable

Love the videos guys, I have family that lives on Man O War cay been to the Bahamas multiply times absolutely love the water down there! Fixing to retire in the next 2-4 years, .trying (with no luck) to talk my wife into trying to sail for a few years. Have you set up the boat in any particular way to limit potential damage if lightning hits mast while at anchor, like putting grounding wires on the standing rigging or other precautions? Just wondering if you could share your thoughts on the subject as a professional "weatherman." Cheers.

There's no consistent pattern of damage due to lightning. Clarity isn't bonded.

How do you keep safe in CG lighting? Is the boat like a faraday cage? PS--Wife and I are so tempted to sell everything and sail. We'll see... Meanwhile, flip on calaweather, we do those updates (send us photos!;). Thanks for all the vids, been subscribed for awhile now--big fan.
