I made croissants once. The actual technique wasn’t too difficult (expect for the yeast cause that’s always a challenge) the real difficulty was the waiting. I started at like 7:30 am and my croissants weren’t done till after 9 pm. You had to carefully time how long they spent in the fridge and I really couldn’t go anywhere that day for more than an hour cause I kept having to come back and fold.

In vienna, they hated the ottomans because they sieged their city so they made a pastry shaped like a crescent moon, symbol of the ottomans. A french man found crescent pastries in Austria and started making them at a café in France, he renamed them to Croissants

That's wrong you probably heard that from youtube and didn't take the time to do research on the subject, yes kipferl is an austrian pastry and yes french bakers liked the idea and took inspiration from the shape but it's totally not the same thing, kipferl is made with a brioche dough whereas croissants are made like in the video so croissants are indeed french

A bit of history of the croissant. The croissant we know dates back many years ago in Austria, where it was known as the kipferl, being sold in Viennese bakeries. Instead of the crescent laminated(folded with butter) dough that the modern croissant uses, kipferls used a brioche dough. Then, in the early 20th century, an Austrian man opened up a viennoiserie in France. French bakers noted their popularity and created their own version, replacing the brioche dough with the aforementioned crescent-laminated dough. They are likely called Croissants due to their crescent moon shape. The details are kind of rough and may be incorrect as I am only going off what I remember when I did my presentation on the history of certain French pastries/desserts, so feel free to correct.
