Here is a video we made a nearly a year ago. It's vital to properly understand the concept of uberlaufen in our modern reconstruction of longsword fencing.

Any cut is not going to cut through a gambeson if you stop at the point of impact. Also, there is at least one specific play in fencing from the sweeps that says to streich to the body. I think the conjecture that oberlaufen is because they wore gambesons is not particularly stronger than the old assumption that any oberhau threatens the upper openings, which present a more dangerous threat than an unterhau, and so you rely on their self preservation to prioritize the parry. I also agree with the comment below, suggesting that rising to a thrust is an incredibly dangerous action, gambeson or not.

A rising thrust would still lead to a double. It is strange how your experience seems to go with the fact that people cut various targets such as tatami mats with rising cuts. Perhaps they simply require more range of motion, like starting the cut from tail guard , to cut through a gambeson ? Or insufficient sharpness ?

You have seen the talhoffer depictions that cut off wrists, right? Also , what makes you think they would have worn gambesons? We have mostly evidence for doublets or the leather suits, but most likely oil tanned light leather

So what is the low guard / Alber good for? I have not found a use for it as a beginner.

a beginner doesn t need to master each and every guard, it is important to keep your center with a Langenort, a Pflug.. then you understand how to move your guard from the feet, through the hips till your shoulders, be the guard instead of doing it. Will come naturally

If you cut from down from Tag and your opponent steps back, Alber is where you end up, so you need to be able to fight from it even though its not a guard you are likely to take at the start of a fight. I use Alber when I am fighting people who are hesitant to engage, I start in tag and cut down, leaving myself open for a moment to bait an attack so I can work against their blade.

You cut from guard to guard. Every downward cut you make, will end up in a low guard. Do not think of guards as a static thing. Guards are starting points and endpoints. Think of them as the launching and recovery points for your cuts.

Thats not sweeping, thats slashing up with the false edge. Sweeping is what meyer calls striking out, the Russians, who taught me, also use it in cossack saber. Look for the description in meyers rapier, it could also be doebringers peacocks tail. learn some flankarovka (sword flourishing) and understanding how to do it will come with some practice as its not hard to do when you know how to use your body properly with weapons, which requires instruction from a living tradition to understand
