I think the Nooks are meant to be mythical tanukis, rather than normal tanukis. Mythical tanukis are often depicted with promissory notes, i.e. money, and are considered to be deity-like spirits (like kitsune, which I think Redd is based on), which means they could have immortal lifespans. That said, in tanuki years I bet that Timmy and Tommy are still kids, so I imagine that the coffee Brewster gives them is decaf. Like he gives them coffee because they're running a business and he wants to help them feel grown up, but also they're so little caffeine would mess with their system, so he gives them decaf and just doesn't tell them it's decaf, so they can still feel very grown-up. It seems like the kind of thing Brewster would do.

At least Tortimer has a reason to live so long. Tortoises can live for hundreds of years. Timmy and Tommy, however...

We have a third generation of Timmy and Tommy. They come from a long line of Tanukis named Timmy and Tommy - just like how there's multiple Nurse Joys and Officer Jennys in Pokemon.

In my mind, I think they do age just slower. In the game where they first appeared (Idk remember the name, I'm sorry. But I do believe it was City Folk) They seemed to be much younger, around Daisy May's age, and followed each other more often. In New leaf, they were allowed to run their own store and manage their own rooms. I know in NH we see them together, but they are still on their own. My guess, in New Leaf they were tweens and in NH they are young teenagers, while Daisy May is still in elementary school.

Timmy and Tommy have jobs all week all day including weekends. Daisy Mae sticks around on sunday mornings only. Of course the boys need coffee to do their job. Katie drinks coffee too, possibly for just traveling all the time alone. Leila and Daisy Mae may be under restrictions by their guardians from drinking coffee. Maybe it is all just a preference of the kids, after all the coffee doesn’t necessarily make anyone hyperactive. Coffee as a casual drink even for kids may simply be another quirk of the AC universe.

What if, instead of a fountain of youth. We're in limbo or a coma, could explain why we're also the only human on the island (besides online but considering one has to *pay* for online I don't really count it for this theory)

Didn't Joan retire? I seem to remember dialogue that suggests she's too old to go to islands. Nat and Chip were replaced with younger relatives too. Phineas as well, though he is never mentioned. They're all portrayed as older characters who don't do their jobs form older games so they at least must be aging.

After being bestowed un-aging by the eldritch god Paolo, Timmy and Tommy are forever cursed to wander the world.

I think it all works if each game has maybe the duration of a year and being an immediate succession to the previous game, so between ac and acnh aren't 20 years but merely 5ish. adults don't age that much in 5 years, and kids can still be kids. in addition to that someone else already mentioned tanuki spirits instead of the real animal, giving them already a "more human" timeline/aging (if any at all). if Timmy & Tommy just got to elementary school in the beginning, they might not even have quite entered middle school yet.

I feel like they don't age for the same reasons Mario doesn't age. Nintendo makes a good amount of their money off of nostalgia and the characters don't necessarily have to change to have an enjoyable game. If I were to guess I'd say they both have some growth impediment. Whether its genetic dwarfism or because they were malnourished from being orphans. Which I guess would explain why they are given coffee and are allowed to work, cause they're adults. Although I do like the more magical theory proposed by this video.
