i really appreciated that the guy acknowledged spices don't really go bad. so often people who represent companies will say stupidly resolute things like "you should throw it out and buy a new one every six months!" because they obviously are interested in pushing product. Just wasteful capitalist bs. Yes, spices diminish in flavor- but there are so many factors to that, ideally you should just get familiar with the flavor of your pantry so you can sense when one is starting to taste muted, not just blindly follow a calendar. Respect, dude.

paprika is the hungarian word for pepper, bellpepper, capsicum, etc. the powder version actually goes in almost every traditional hungarian dish. My grandparents back in the day were making this at home and selling at a farmers market, and the peppers were dried out naturally, not in the oven, guess you can speed up the process with an oven. I love the sweet paprika on eggs, reminds me of childhood, we sometimes put paprika + hint of nutmeg. Super channel!

I spent 5 days in Budapest and ate paprika dishes multiple times a day and vowed I would make an effort to cook with it when I got home. Nope. I just use it like black pepper when I want to bump up a dish that’s already prepared. Sandwiches, pastas, rotisserie chicken, poached eggs and porridge, rice bowls, you name it. Also use paprika in micheladas which is my go to cheap beer cocktail. 😀🍺

My maternal oma was Hungarian and she made the very best goulash, which she taught me how to make before she passed away. It has only 6 ingredients ; beef, onions, neutral oil, sweet Hungarian paprika, salt, and water. Get a good quality paprika (imported is your best bet) and your goulash will taste complex and rich without needing more. Also, paprika oil: smoked Spanish paprika, sweet Hungarian paprika, and grapeseed oil. Ah-mazing. I drizzle it on soups like split pea and lentil, use it as a dip for nice crusty bread, and a whole lot more.

I'm from Spain, so when I saw paprika being described on the description as "red flour", I was like, "Well, clearly they haven't had proper paprika." And then I kept reading and the text cut off at, "until I tasted some smoked paprika I bought during a trip in--" I clicked the read more with some trepidation, wondering what country June could've possibly traveled to with proper paprika, and what if it wasn't Spain?! What if there has been proper paprika outside of Spain all along?? (A likely possibility given that paprika doesn't actually originate in Spain lol.) Fortunately June HAD bought the great paprika in Spain and I didn't have to question everything I know. 💝

Paprika is so, so, so underrated. Personally, if I am baking fish, especially salmon, Spanish paprika is guaranteed grab. If I am cooking mac and cheese from scratch, Hungarian paprika in the roux sauce is a must. If I am cooking a tomato based curry I will add both Spanish and Hungarian paprika on top of the usual spice suspects that go with such a curry. Sprinkle it on popcorn along with salt. Roast cauliflower with olive oil and Hungarian paprika and it will become your go to way of eating cauliflower. Baking some chicken wings? Where's my paprika!? Paprika makes about anything taste better.
