Traditionally rice is cooked in the afternoon and excess water is drained. After the rice cools down to room temperature, it is soaked fully in water and stored in an earthen clay pot. This covered pot with soaked rice is left overnight at regular room temperature. The rice would ferment by the next morning and is eaten for breakfast.
The lactic acid bacteria break down the anti-nutritional factors in rice resulting in an improved bioavailability of micro-nutrients and minerals such as iron, potassium and calcium.
For example, after 12 hours of fermentation of 100 grams of rice, the availability of iron changed from 3.4 mg to 73.91mg.

There's a very similar dish to it known as "Paanta Bhaat" meaning "water rice". It's a well known breakfast food in our rural areas of West Bengal and Assam primarily.

Over 60 years ago when we were a joint family I clearly remember that on some days after everyone else had had their breakfast the women sat down to a meal of "pazhinji" (pazhaya + kanji) along with "pazhangoottaan" (pazhaya + koottaan). Koottaan = various curries. So in our Kerala home not only leftover rice but curries too were eaten but only by the women!

Hi, can U tell me how to do this. Just soak left over rice in water and add chillies, onion in the Mrng or add them all together in night itself? How about the ganji(starch from cooked rice, what do we do that). Also won’t chillies stop the fermentation? I know too many questions, but would appreciate the feedback as I want to incorporate this

Don't use a Rick cooker or pressure cooker to cook rice. Instead use a 100% steel vessel. Strain out the starch from it. Dhals = equals to lentils should be fine 🙂.

Infact it is very good for a diabetic. Just make sure you cook the rice in a 100% steel vessel. Strain out the starch.
