Insider’s Medha Imam went to TAP NYC to try beijú for the first time. The dish is made from tapioca, a starch extracted from cassava root, and is often referred to as a tapioca crêpe. It's commonly eaten for breakfast in Brazil. The health-conscious food has been a staple among indigenous people from the northeast region of the Amazon forest for hundreds of years. Today, it is an integral part of Brazilian cuisine and is typically eaten with sweet and savory fillings. We met up with Brazilian travel influencer Jo Franco, who shared how she eats the dish and to see how it’s prepared at TAP NYC.

I went to Brazil 🇧🇷 last year from Philippines 🇵🇭, and when I was in São Paulo, I had this tapioca snack almost everyday! I love it with lots of cheese! There was this sweet lady selling them outside of the Shopping Cidade mall in Avenida Paulista, and I always bought from her! Those simple things including Pão de Queijo are what I miss about Brazil! Now that I am back in my home country Philippines 🇵🇭, i have learned to make the tapioca crepes and Pão de queijo myself! They both use the same ingredient which is tapioca or cassava flour, which I am thankful they have in my country! It’s like I can get to taste a slice of Brazil 🇧🇷 in my home!

A tip: If you mix three tablespoons of tapioca and an egg, you get a kind of batter that is very reminiscent of a standard crêpe, but with no dairy and no flour. As the beijú, it's also very neutral in flavor so you can make savory and sweet ones. I like adding spices and grated parmesan cheese to mine.

I love this, my grandma used to do this all the time for me! She, therefore I, call it beiju and eat only with a thin layer of butter, instead of meat, chocolate or any other fillings. The fillings are actually very odd to me, can't quite like. Just butter is best. And not too thin, nor thick, if the beiju is too thick, it's too chewy and harder to eat, if thin, it's just not that special.

Tapioca is is widely consumed across Kerala,India. It is taken as breakfast or as a staple food. Tapioca with fish curry is absolutely delicious

That's cool, we can also eat Tapioca in the morning, but in my city in Brazil, which is in the northeast, tapioca is a late afternoon food, we eat it with coffee.

Growing up in the Philippines from the north thats all i eat..The only difference we use freshly grated and i use coconut to mix it instead of water..

That's cool. Here in Brazil the portuguese got it from the indigenous people once it was a recibe created by them. It has been eating popularly since the XVI century, but the drier and crunchier version we call Beiju.

If you mix 2 spoons of tapioca with 1 or 2 eggs you have something called crepioca (crepe+tapioca) which I eat everyday.

So the tapioca just melts down in the pan? He poured the flour in, then added the toppings and suddenly it was a beautiful crepe. No batter, no mixing or anything. Was that part edited out, or does the tapioca just melt into a layer? This is blowing my mind right now.

Just a few notes about beijú and tapioca. In some regions of Brazil, especially in the Northeast region, tapioca crepes are called simply "tapioca", not beijú. The word "beijú" in these places refers to another cassava product, something like a hard cassava flatbread, unlike the tapioca crepes, which are flexible. Another thing, what you guys call tapioca is cassava starch, which is a very fine and white powder. It's obtained from a liquid that's drained from peeled and shredded cassava root. That liquid is full of starch and goes to a container, so the starch will sink to the bottom. At this point the water can be drained and the white starch that remains is the cassava starch, called "goma", "fécula de mandioca", "polvilho", among other names in portuguese. Tapioca crepes, also called tapioca or beijú (as they are called in the video) are mode from cassava starch. But the beijú I mentioned earlier, which is a hard flatbread, is made mostly from cassava flour, which is grainy and kinda sorta reming you of bread crumbs. That shredded cassava, after drained from most of the liquid, is cooked on big pans until it's completely free of moisture. That's the cassava flour or "farinha de mandioca" in portuguese, which we use to make this hard beijú flatbreads, but also "farofa", a staple side dish in our region. You have no idea how many foods can be made out of cassava starch and cassava flour.

I' really don't know your experience about Brazilian Northeast but, here in Salvador and across all Bahia state, "Beiju" allways been "Beiju". 'Tapioca' is the ingredient. If u ask a grandmother from northeast for 'tapioca' she'll ask "what for?" cuz you can make a big amount of different recipes with tapioca despite the youngsters're forgetting this after 2000's boom of "tapiocarias" in the major cities So... @@fabriciolima071I'm from Fortaleza and during my 39 years of experience the Ingredient has always been called "goma". The cooked food is "tapioca". Maybe in Bahia is different, but here in Fortaleza that's how we call it.

thats actually not a crepe, its how you normally eat tapioca (we usually dont put sweet stuff inside its normally butter, eggs or cheese) theres something called crepioca(crepe+tapioca) which is tapioca powder mixed with beaten eggs or milk

I think they didn't know which world would be better to describe it once Tapioca is the cassava starch so the product that becomes the "pan tapioca" would be something inbetween a crepe or a flatbread, maybe the look is closer to a crepe than a flat bread. We just call it Tapioca.

It's no tapioca crepe, tapioca or another. The original name is "beiju", that name came from "tupi guarani", a group of indian language speaked on northeastern region of Brazil.
