It's about a 5 hour flight to the mainland from Hawaii, are you able to do any work on the plane?

I can usually sketch layouts or write a script on the plane. The only time that's hard to do is when I sit next to people who are sleeping and they take up extra elbow room, or I'm tired, haha.

does the comic book industry prefer artists who create their work traditionally/physically rather than digitally?

It doesn't actually matter how the art is created. What is most preferred is the art gets turned in on time with the level of quality they're use to. The trick is turning in traditional/colored pieces as fast as digital pieces get created.
