As a pancake lover, I wanted to take fluffy pancakes to the next level, so I made it as fluffy as possible!
Written Recipe 👇🏻
Ingredients:
-Ice cream (2 pints) - Higher quality is recommended, but any flavor can be used.
-Pancake mix (4 cups)
-Milk (4 cups) - Any type, e.g., oat milk, whole milk, almond milk.
Instructions:
Prep the Ice Cream:
-Place the ice cream into a bowl.
-Using a hand mixer, whip the ice cream for about 3 minutes or until it becomes thick and frothy.
Prepare the Pancake Mix:
-In a separate large bowl, add 4 cups of pancake mix.
-Add 4 cups of your preferred milk to the pancake mix.
-Using a hand whisk, mix together until fully incorporated. It will feel thick, which is what you're aiming for.
-Pour the whipped ice cream into the pancake mix.
-Mix everything together using the hand mixer until well combined.
Baking the Pancake:
-Preheat your oven to 375°F (190°C).
-Lightly spray an oven-safe pot with non-stick spray.
-Pour the pancake batter into the pot, ensuring not to overfill. Fill the pot either halfway or up to three-fourths full to allow for rising.
-Cover the pot with a lid. If you don't have a lid, you can use foil.
-Place the pot in the preheated oven and bake for approximately 45 minutes to an hour.
