Sweet corn. For me, those two words sum up the essence of summer. Ripe, recently picked sweet corn. Growing up, on what seemed like the most humid day possible, Dad would say that the sweet corn was ready. Grandparents would come to help and we would put away over 150 pints for everyone to share. Yes, that's a lot but the logic was that once the mess was made, you may as well put away a lot!

Obviously, we don’t have the same preservation needs as our grandparents did, but preserving sweet corn for use year-round is always worth it! Instead of a full-on recipe, this is a process. You can do as much or as little as you like.
Rough estimate:
30-40 cobs of corn produce 7-9 pints of cut corn
- Shuck and remove the husks from the sweet corn. Cut off any rotten or bad spots. Remove the silks and rinse.
- Bring a large pot of water to a boil. Add corn to the boiling water, and allow it to return to a boil. Cook for five minutes.
- Once cooked, remove corn from water and place in cool water to stop cooking.
- Submerge the corn in ice water until completely chilled. Continue the process until all the corn is cooked and chilled. It is essential the corn is chilled, including throughout the entire cob. If not chilled, the corn loses flavor and freshness.
- Once chilled, cut corn off the cob. Pack into containers or bags. Label and freeze.
The corn will keep for at least one year in a deep freezer.

i've frozen a lot of fresh corn in my life and you prepared it perfectly. Excellent presentation/explanation. Fresh frozen corn tastes as fresh as straight from the garden. Gee, i can't stop watching your vids. tytyty

Just the method our family has used forever as well. One little add-on is that we use a straw to create a vacuum package out of the pint bags. We put the straw in the corner of the bag, push out most of the air as you've done, press the zipper seal closed up to the straw, then suck out the remaining air while holding the small opening tight against the straw and pulling out the straw while still sucking, then pressing the last bit of the 'zipper' seal. This works beautifully for most goods you are freezing. I like it better than the vacuum sealer because I find that juices from the fruits or veggies, compromise the seal. Thanks for sharing this video.

I do it the same way except use outdoor propane cooker, large stock pot, cooler with ice water and a electric knife. Can keep the water boiling doing 6 ears at a time. Also after pulling corn from ice bath i put on cookie sheet with towel dry for abit before removing corn from cob.

I cut toward myself also. Have used almost every utensil/gadget to cut it off and have went back to knife, easier, cheaper and less messy.

Kaleb, I’d love to see canning of green beans. I want to buy a pressure canner, but not sure which one, it’s just my husband and I. My mom always canned the best green beans and I want to learn. I had a garden once where we use to live. I canned the most beautiful green beans, but no pressure canner. I used the hot water bath and thought I was doing it long enough. They looked beautiful, and I’m pretty sure they all sealed. Got up the next morning and they had all ruined. So sad.

I used to do it this way until I learned an easier way. Cut corn off cob. Fill bags with uncooked cut corn then add 1/2 cup of brine. Done. (When needed just thaw and cook for about 6 mins) Brine is water, salt and a little sugar. BEST tasting frozen corn I've ever eaten!
