It actually goes pretty well with an omelette, though that may vary with how much you put on it and the exact flavour and texture. Personally, I feel ketchup goes better with fluffier omelettes. Not sure why.

For fluffy omelette, I usually use two eggs; I seperate the yolk and whisk the white part into cotton-like fuzz before putting the yolk back and whisks until they mix. I use a bit of olive oil and butter into the pan and heat it to medium. When I pour the egg into the pan, I stir it a bit. Maybe wait for a couple of seconds before rolling it.

According to the Kitchen Gadgets guy on Epicurious, the best way to crack an egg is on a concave surface. I find using a flat surface (like a table) causes more of a shatter with more shell fragments. Using the side of the bowl gives me a more precise crack.

From the physics perspective it's almost impossible to crack both. In the same way you can't make rope tear in two places at once. As soon as a weaker egg starts to crack, the force applied to the second egg shell becomes greatly reduced and it no longer has a reason to crack.
