CUMIN SEEDS | जीरा 2 TBSP
GREEN CARDAMOM | हरी इलायची 6-7 NOS.
BLACK CARDAMOM | बड़ी इलाइची 3 NOS.
CINNAMON | दालचीनी 3 INCH
STAR ANISE | चकरी फूल 2 NOS.
CARAWAY SEEDS | शाह जीरा 1 TSP
BAY LEAF | तेज पत्ता 4 NOS.
SESAME SEEDS | सफेद तिल 3 TBSP
POPPY SEEDS | खस खस 1 TBSP
DRY COCONUT | सूखा खोपरा 1 WHOLE. (CHOPPED)
OIL | तेल 2-3 TBSP

GARLIC | लेहसुन 1/2 CUP / 100 GRAMS

My family lives in Gujarat but my forefathers came from Maharashtra five generations ago. We are as Gujarati as one can be in food, culture and daily life. I watch dreams in Gujarati. But whenever I eat Marathi recipes, it feels like home. It feels like I'm somehow connected.

Being a Kolhapurkar, I can say that all the traditional recipes from kolhapur, be it this, misal or kanda lasun masala.. everything was beyond perfect. Never seen such authentic recipes over the internet. Kudos to you chef!! You made me homesick now❤️❤️

Thanks for sharing the exact Kolhapuri Mutton recipe, it will help non Maharashtrian people to understand the real Kolhapuri taste. It avoids the people misconception which is created by Hotels where they add only red chilli on the name Kolhapuri. Totally Loved it 😍😍

Loved ur recipe.. M from Kolhapur.. We just don’t add tomato in vatan nd try adding fresh coconut( roasted) 1/2 to 3/4 cup in rassa vatan, it elevates the taste..

damnnn cheff major props. Your marathi and accent is right on spot. i've never heard another Non-marathi Indian get the 'L' and 'N' right because the tongue needs to roll in a way thats not usual.

Your recipe is bang on. Kolhapuri thaali approved by a Kolhapuri. Every restaurant and khanaval has a slightly different taste because of the measurements of the ingredients but you got the crux right. Pandhra rassa just needs a little bit more getting used to after which it wins over the tambda as a favourite. Also 2 small things special and specific to our thaali is the masale bhaat and dahi-kanda

I following your most recipe. Two suggestions in recipe. I am seeing My mom & Aaji making this years. First: when you make vatan for tambda rasa. Kindly pest all musala then add fired sukha kobra make pest then last onion & tomato. It will give you different test. Second: when you boiling tambda rasa & suka, kindly do not add lemon juice. You have to eat food that frame time. This dish have amazing magic. If you store this dish with The time period after 12hrs, 24hrs, 36hrs masala test flavor is increased. Thank you for all your knowledge sharing.

I made this as a dish to celebrate Eid this weekend. A white Aussie. It is was a hit!! Thanks my friend. Even my granddaughter said it was the best! None left. बहोत अच्छी रेसिपी सर. Just want to suggest. हमारे यहां कोल्हापुर मे, पांढरा रस्सा के वाटण मे खसखस और काजू आधा घंटा पानी मे भीगोके उसकी फ़ाइन पेस्ट बनाई जाती है. बाद मे घी गरम करके उसमे दालचिनी, हरी इलाइची, लोन्ग और 2 सुखी लाल मिरची का तडका देकर उसमे काजू खसखस की पेस्ट भुनी जाती है. बाद मे उसमे स्टॉक डालके अंत मे नारियल का दूध और थोडा घी डालते है. और एक बात, जब मटण स्टॉक बनाया जाता है तब उसमे हल्दी नही डालते क्योंकी इससे पांढरा रस्सा का रंग थोडा पिला हो जाता है. और एक बात. ये स्टॉक इस्तेमाल करके मटण पुलाव बनाया जाता है जो बहोत टेस्टि होता है.
