Ingredients:
10 dried shiitake mushrooms
3/4 cup dried black moss
1 piece of fresh ginger
1 shallot
3 cloves of garlic
6 dried oysters
1 cup salted pork (pork belly works great in this dish too)
1.5 tbsp oyster sauce
1-2 tsp shaoxing wine
about 2 cups of mushroom water
add more water; enough to cover all ingredients before braising
cornstarch slurry (1 tsp corn starch + 2 tsp water)
*serve this dish on top of any cooked leafy vegetable of your choice
mushroom marinate:
1/2 tsp sugar
1/5 tsp salt
1/2 tbsp oil
pork marinate:
1 tsp cornstarch
1 tsp soy sauce
1/4 tsp sugar
*prior to this marinate, I marinated the pork with 2 tsp salt over night)
wash black moss with:
oil & water

1 小塊薑
1 個 紅蔥頭
3 瓣 蒜頭
6 隻 蠔豉
1 碗 鹹豬肉 (要帶肥的; 豬腩肉都可以)
1.5 湯匙 蠔油
1-2 茶匙 紹興酒
大概兩碗 冬菇水
炆之前水量要蓋過食材; 可加清水
粟粉水 (1 茶匙粟粉 + 2 茶匙 清水)
*可選擇一種綠葉菜伴碟
