I am going to bring Basque burnt cheesecake to a whole new level with this yuzu tea and matcha version. Apparently, this cake is made famous by a patisserie in Shanghai, China. It consists of 3 layers, from bottom to top: matcha yuzu cheesecake, yuzu cheesecake and lemon whipped cream.

Ingredients: (6“ round)
(A) Basque burnt cheesecake
Cream cheese 奶油奶酪 1 block (~225g)
Sugar 砂糖 25g
Honey yuzu (citron) tea 蜂蜜柚子茶 65g
Egg 鸡蛋 2 no.
Whipping cream 鲜奶油 200g
Corn flour 玉米淀粉 8g
Matcha powder 抹茶粉 6g
Hot water 热水 2-3 Tbsp
Bake in preheated oven at 220C for 25 minutes
(B) Whipped cream
Whipping cream 鲜奶油 150g
Sugar 砂糖 15g
Lemon juice 柠檬汁 10g
Garnish: green grapes, lime zest, yuzu peel
