Ingredients
Oil - 1 tablespoon or as required
Mustard seeds - 1 teaspoon
Curry leaves - 5 to 6
Turmeric powder - a pinch
Garlic - 5 to 6 finely chopped for potato mixture and 10 to 15 for chutney
Ginger- green chili paste - 1 teaspoon
Boiled potato - 3 large-sized mashed
Salt - 1 tablespoon for chutney and for potato mixture as required
Coriander leaves - as required finely chopped
Dry coconut - 1 bowl shredded
Lemon juice - 1/2 lemon
Red chili powder - 1 small bowl
Besan/ gram flour/ chickpea flour - 1 bowl
Water - 1 glass
Sugar - a few granules
Bun/ pav - 2
Green chili - 2
Instructions
Heat oil in a pan and add mustard seeds. Allow it to splutter.
Add curry leaves, turmeric powder, garlic, and ginger-green chili paste. Saute it.
Add mashed potato, salt, coriander leaves, and mix it well. Saute it on low to medium flame for a few seconds.
Meanwhile, heat another pan and add shredded coconut. Dry roast it to remove it's rawness and moisture.
Add garlic into the shredded coconut and roast it for 2 to 3 minutes or a nice aroma and a slight brown color comes. Keep the flame low. Allow it to cool down before grinding.
Turn off the flame and add lemon juice. Mix well and allow it to cool down.
Take a mixer jar and add dry roasted shredded coconut and garlic, red chili powder, and salt. Dry grind it.
Further, strain the besan in a bowl and pour water. Mix it well. The batter should be of thick flowing consistency.
Now, add salt, a pinch of red chili powder, sugar, hot oil, and mix it well.
Take a small portion from the potato mixture and give it a nice round vada shape.
Now, deep that vada into the besan batter and coat the besan to the vada with the help of a spoon.
Further, heat enough oil in a pan properly and place the pada. Keep the flame low to medium and stir it gently.
Transfer the vada to the tissue paper to remove it's excess oil.
Now, take 2 pavs and horizontally cut from the between but not entirely. Spread the coconut-garlic chutney on one side of both the pav.
Place the vada over it and press it gently. Again spread the chutney and gently cover the top of the pav.
Take 2 green chilies and place it into the hot oil and fry it for a few seconds.
Delicious Mumbai Ka Vada Pav Street Style is ready to be served.
