Very good question indeed. We can only imagine part of the answer. La Combe de Lavaut is only a Village AOC, and is not even classified as a Gevrey-Chambertin Premier Cru. It is probably because it is situated at the very end of the Combe de Lavaut. But there may also exist historical reason that we don't know...

Pour le coup je ne parviens pas a comprendre comment un vin peut fournir des saveurs si différentes selon son terroir: pq un charmes sera tres souvent meilleur qu un mazoieres pourtant seulement separé par un chemin de terre..

C'est ce qui est incroyable et qui a amené les vignerons à travers les siècles à distinguer les parcelles de vignes et à les vinifier séparément. Chaque trait du paysages (sol, sous-sol, altitude, orientation, ensoleillement, présence ou non d'un flux d'air, d'humidité...) se combine en une infinité d'expressions de nos vins. Parfois, le chemin a été tracé justement parce qu'il séparait deux paysages différents. C'est un processus qui a pris des siècles et qui nous émerveille chaque jour !
