I've read Grandi's books and I love him. WIth that being said, as an Italian living in Los Angeles, I find the quality of the food overall here being generally lower than in Italy. All the legends of food are clearly invented, but all Italians do really care and generally havexperience with food and know howto cook much more than, for example, Americans. So the result is a population very picky and self-aware about food quality, which brings the overall cousine quality quite higher if compared to other countries. So in the end yes, Italian food is actually great, but not for the reasons we think.

It is wild that you made a whole video about italian food, investigated the origins, and didn't even mention the Roman dishes upon which a lot of it is based. Cacio e Pepe is one of the oldest dishes still served in Rome and does actually come from ancient Rome. Pasta all gricia is another precursor to carbonara and originated hundreds of years ago. The whole bit about Parmigiano being a soft cheese is also probably not true. There are historical record of parmesan similar to the modern cheese as far back as the 14th century. Interesting theories, but if you have ever tried italian-american food you would understand that the stuff made in italy is significantly different. Less greasy, less cream and butter, and higher quality ingredients.

The only place where you can still see how a medieval Italian town looked like is San Gimignano, the towers are still there. But it's really a shame that Bologna which had more than 70 and Firenze which had 150 towers no longer have them😢😢😢 They'd be the most spectacular places ever

I'm skeptical that there were 100-meter towers in 13th-century Bologna. In the late 19th century, it took the development of iron/steel-girder construction to get buildings higher than about 30 meters.
