I made this back in April with green onions from my garden. It is absolutely spectacular. I've been enjoying it for almost 2 months now and it just keeps getting better. It's my favorite kimchi by far and it's so easy to make. 😊

I made them and they are quite sweet because of the half cup of sugar, is that correct? And what am I doing wrong when the pancake doesn't become crunchy at all? Not hot enough, too much oil?
Can we use seaweed that we used to make gimbap? At my place its really hard to find that kind of seaweed😢

hey maangchi. how long it should wait outside, will it go bad if it waits out longer than 2-3 days? i made the recipe, and after keeping it out fridge two days, smells great and sour, but when i taste, it tastes little bitter, not sour. i couldn't find korean radish so i used japanese radish, do you think that may be the reason?

I think the Korean approach to meals is very smart. A well balanced entree that balances salt and sweet flavors well with a delicious array of side dishes that are nutritionally diverse. And I don't know how Korea makes its vegetables so yummy! I even ate cucumbers today in a sauce at a Korean place and I HATE cucumbers unless they're pickles! They were so freaking good. I hate veggies in general, but Korean and other Asian cuisine makes them not just palatable but tasty.

I recognize that Three Crabs brand fish sauce. If you want an even higher quality sauce, look for a brand called Red Boat. It's made using fish from the waters off Phu Quoc, a Vietnamese island famous for the quality of its fish sauce and is the gold standard for nuoc mam style fish sauce.
