I'm pretty sure the first original version was actually the slowly dry-fried version - which was later replaced by the faster fried-til-dry version by restaurants and street food vendors to save time... but I really like your recipe which I used as a base for my own version. For the dry-frying I recommend a wok with little oil or if you are afraid of losing your seasoning just a non-stick pan (works even without oil on medium heat). Thanks again for the recipe! This recipe was just spicy enough for flavor but not too spicy that my wife couldn't enjoy it. Perfect blend. When she's not around I will increase the spice levels. This was so easy, I'm glad I found the recipe!
