I just got mine the other day. I wonder what are good temperatures to keep the starter at? I will make bread maybe once a week. If I want to warm up the sourdough, what is a good temperature?

In the summer when it’s really hot will it cool the temp for the dough to 80?

The Proofer is only designed to warm its contents, not cool. If the room temperature is above the set point, the Proofer cannot be cooler.

Thank you! We proofed at 76F for about 3 hours. Before baking we sprinkled everything bagel seasoning and then filled with whipped cream cheese after they cooled. So good! We followed our small-batch croissant recipe for the croissants: brodandtaylor.com/blogs/recipes/small-batch-croissants

Here in Mallorca we have a sort of brioche (sweet dough) made with potato. It’s called 'coca de patata'. People eat them with hot chocolat or with butter and marmalade. They are soft, fluffy and delicious
