Sencha fuka-midori is one of my favorite teas! It's on the cheaper end, so I can stock up on a budget, but the taste is still excellent.

Hi, that is interesting. Kukicha is generally known to have less caffeine but people do have varying caffeine sensitivities for sure.

Hi, in general, more premium grades of matcha will have a rich, green color. Restaurant and culinary grades will have more of a yellowish green color. Greener matcha and more yellow matcha can both be good depending on how one expects to use it.

Yes. While a kyusu is a great way to brew genmaicha (and a wide variety of other teas and tisanes), you can also get a cup and infuser basket. We offer kyusu and cups with infuser baskets on our site (LT Cup with Strainer as an example), but you can also look up cups that come with a metal infuser basket. Yes, this is correct. You can brew fukamushi-sencha both ways but the brewing method on the right is more efficient. It allows you to get the most out of the tea.

Before brewing hot water into the kyusu, how long should I let the water cool down once I put the boiling water into the tea cup?

For fukamushi, if you let the water boil, let it cool 4-5 minutes before brewing to prevent bitterness.

@@taishou94 Fukamushi brews very quickly. One full teaspoon (4 grams) per 250 mL of water. First steep is 30-40 seconds. Second steep is 20 seconds and 3rd steep is <10 seconds. A 4th steep for 40 seconds and a 5th for 80-90 seconds at just under boiling is possible also.

Yes, same works with Gyokuro and other Japanese teas. Fukamushi Sencha is the most comprehensive tea to explain this technique.

Japanese green teas are generally brewed in shorter than other teas like Oolong and Black teas because tea leaves are well kneaded and rolled through production processes so that the components are more easily extracted. Because we recommend using boiling water especially for an aromatic tea like Genmaicha, you may not want to brew long to avoid bitter cup. Of course, you can adjust infusing time to make your cup stronger or lighter. Also if you don't use boiling water, you may want to infuse more than 30 seconds. Thank you!

The angle of this video makes it look a little less steep than it actually is. Note how the trees are at an angle! Is it environmentally sound to cultivate any crops on a mountain this steep? Tea plants like these are not going to be as deep rooted as the natural forest vegetation and between that and the exposed soil between rows and people and machinery moving to and fro, I would be worried about the cultivation increasing the risk of soil loss, or worse, catastrophic landslides.

Thank you for your comment and your concern about the environmental concerns of planting tea gardens on hillsides. You may be right about the video. It was taken by an employee of our parent company in Japan who is not a professional video photographer. Consequently the slope may be not as steep as it appears in the clip. More to your point, unlike rice, tea plants need good drainage so a hillside is best. Consequently, many tea gardens were traditionally settled on hills because there are good natural conditions which included drainage which the tea plants enjoy. Japan is also not a big country so we limited in open space and tea farmers have moved up the slopes to plant their gardens. Den's Tea does not own any tea farms but tea has been a part of our family for many generations. We work with growers who understand the responsibility as they plant on steeper hillsides and consider that in our decision to partner with them. We hope there will be more discussion between tea industry and Japanese government about making room for the thousand year tradition of tea. Thanks again for your comment.

It's a very lovely farm. Why is some tea picked by hand and some by the machine? Are they gathering what the machine missed?

Only top bud and leaves can be picked precisely without any damage by hand picking. We only make hand pick to the tea garden that is worth of it because the cost is obvisouly higher than machine picking. Generally we hand-pick only very high grade teas and use machine for regular to high grade. Consequently, we don't blend them.

I love your tea it's hard to buy because i drink almost 2 quarts a day and they don't do many bulk deals so I on buy for as a special occasion
