The undercoat is just a gray shade sealer, gives proper color match since red is somewhat transparent. White undercoat would give a brighter red, black undercoat would make the same color look darker.

They do, you just have to buy the GTS model for much more money, on a base cayenne they don’t add the nice finishing touches 😄👍🏻
