Interesting process of making akamu. Watching this video brought back memories of my secondary school days. I helped my aunt a lot in making akamu. We preferred making it ourselves to buying in the market. Weldone Dr.

Ideally it should be 3-4 days. But I found that the maize kernels I used were unusually hard and there was no sign of fermentation/softening after the typical 3-4 days. Also, I think the weather at that time was not hot enough to facilitate the process. Hence the prolonged number of days. Thanks for your comment/question

Wonderful review🙂. You're right when you said shein is not as cheap as you thought 😂 in my experience it's the modest dresses which range close to R300 or more. I love their wide variety in their modest clothes and sizes though so that's why I keep going back instead of shopping locally.

How long after did you let it let it rest before putting it in the muslin bag? You said till the second day. Do you mean 48 hrs after? Does it spoil if you let it rest more than 24 hrs?

Pap made this way does not spoil easily. The purpose of rest is to allow for separation between the pap and the water. Once you have that, then it’s ok. If you let it rest longer than necessary, the separation may revert and you end up with unsettled pap, especially if it is tightly closed up.

It depends on how good the freezer is. With a frost-free freezer and stable electricity, you can keep it for a year.

Basically and for beginners, all you need is dry corn. However, other things are usually added like ginger, other grains like millet and sorghum. But if it's for business, I'd advice you stick to the basic - dry corn. If your customers then want varieties, you can make for them based on their specifications.

Oh great that he loves to bake. Dinner rolls look so soft. I love the family chat between you both, "you forgot" "You should have reminded me"😂 . I actually don't bake because one of my kids is allergic to gluten in flour as well as as dairy and egg white, and it's rare to not find any of these in baked food. I probably will try this using a gluten free flour I purchased some time back, will appreciate suggestions for substitutes for egg and milk, if you know any ma.

Thank you for your beautiful comment🥰. So sorry about the situation of allergy. She will be healed by God’s mercy. I have not yet tried to substitute any ingredients in baking. However, there are options out there, like you can try none dairy milk such as coconut, almond etc. For the egg, some suggested the use of water + baking soda + oil, or applesauce, or ground flaxseed and many more. But I think you’ll have to do some trial and error to find what works well for you. Let me know if you’re able to get something done💖

The ingredients and the measurement used are: 500g flour 300ml milk 38g sugar 7g dry yeast 1 X-large egg 40g margarine (or 20g margarine plus 20ml oil). The procedure as shown in the video.
