I've seen many cockpit views of insane g's, and it looks like the most thrilling thing in the world. Is it dunning-krueger to think I could handle it first try? In theory I know how to brace and breathe, but is there an element of resistance building that I don't have?

That’s a good question. I would say everyone is very different. Your body type has a lot to do with it. But in general most people can handle a lot of G for a small period of time. But too much too quick will also blackout people pretty quick too.

On your right turning stalls, it doesn’t appear that you are coordinated. Your ball is on the inside of the turn suggesting that you need more right rudder. It isn’t surprising that your left wing dropped.
