If you want a freak out....read the ingredients in the chorizo. It hard to believe, BUT, that's the reason it's so inexpensive.

This is exactly the type of fusions that convince me never to be a culinary purist. So much we can learn from other cultures and it just makes sense to try to combine techniques and ingredients to find newer delicious foods. And these look incredible

I wish you would describe the ingredients and quantities as you make it rather than give your opinion as you go along. That can be saved until the end when the dish is complete and you showcase it.
