Loved the video. Anyone who has the chance to sample nik's food you will be utterly amazed. He is a culinary genius and his passion for locally sourced produce is amazing. I had the honour of working for nik at his truro restaurant. He was a great boss, and hope he is smashing in Jersey

Great take away would be that the industry (not only hospitality) is constantly changing and being part of the movement rather than sitting still, is what is required for those who wanna achieve excellence within their field. Smashing it Emma, well done! Keep working for great chefs and then use it to make something awesome that is truly yours. Hospitality at the high end will always do well but, for the majority of food businesses in the UK it's a shamble of an operation which has jaded so many (myself included) and as a result more closures every year. I love cooking but, cooking for money (in the UK) took the love out of it; for me at least. Great podcast! Appreciate the good audio. Subbed and I'm not even from/in Jersey.

What a fantastic interview. We first found the Bass and Lobster through Tennerfest many years ago and have been going there ever since. Kirstie is absolutely fantastic and this interview just confirmed it. I appreciate its a partnership and the food is to die for. It was good to catch her in this interview as she talks so much sense and that is a breath of fresh air.
