রুটি খোলা রেখে দিলে শক্ত হয়ে যাবে, তাই আপনাকে হয় হটপটে রাখতে হবে, নাতো ঢাকা দিতে হবে। রুটি নরম আর তার স্বাদ ডিপেন্ড করে আপনি আটা কেমন করে মোথেছেন! অল্প জল দিয়ে দিয়ে, বেশ খানিকটা সময় দিয়ে আটা মোথলে, রুটি অনেক নরম হয় আর খেতেও ভালো হয়।

I have been trying your Kolkata style briyanis and they have been coming out well except for the bottom gravy almost buring and sticking to the handi. I want to go a step further and try using the Bengali type brown coloured ghee. I know you recommended a few brands, but in Bangalore i found a person who sells: 1. Mayapur gawa ghee 2. Mayapur shorer ghee I thought you will be the expert to best explain to me 🙂 what is the differnce betwn gawa and shorer? Is one cow and the other buffalo ghee? Which one should I use for the authentic Kolkata biryani? Thank you.

Thank you for your feedback and the effort of making perfect biryani. Little rice may stick to the bottom or there may be little oil at the bottom, which is quite normal. So, do not worry much about it. Since, you are trying to achieve perfection, I would suggest to keep watching (hear) for the chur chur sound near the end of the low-flame dum. You should be able to hear this chur chur sound when you get your ear very near to the patila/handi, similar to eavesdropping. Be careful not to burn your ear! The chur chur sound and the smell of pakka biryani is the proper indication of completion of dum. Too much prominent chur chur sound means there is no oil left at the bottom and things are starting to stick at the bottom! The best ghee for Biryani is the buffalo ghee. Gawa ghee is best for eating with rice, but buffalo ghee is better for biryani or cooking. I do not know much about shorer ghee, so cannot comment on it. Shor means the layer of cream that forms on top when we boil milk and let is cool. It can be from cow or buffalo. But, most likely it will be cow milk. Shree ghee is recommended, but this do not mean that one cannot use other ghee! Try to use the white ghee. I always suggest Shree ghee as give the best results.
