Gary House prepares the number 1 requested recipe on the Cooking Everything Outdoors show - Steve Raichlen's Basic BBQ rub! Seriously simple to make for the first time rub makers and oh so delicious!
Rib rub
1/2 cup sea salt
3/4 cup brown sugar
1/2 cup paprika
3 tbsp coarse ground black pepper
2 tbs garlic powder
4 tbsp dried onion flakes
1 tsp cayenne pepper
1 tsp celery

I just made this ingredients for my dry rub. I thrown In a few more spices to the mix. We like our ribs with a lot of heat. Set the oven for two hours . It’s been cooking for an hour and a half. It has my house smelling so good! Looking forward to tasting this yummy mix of awesomeness

hello Gary, thanks a lot for sharing this recipe. Made it a few days ago and today used it on some chickenwings and a few pieces of porc. It tasted great, but next batch is going to get bit more cayennepepper. Had the neighbor try some chicken and porc. I now have only half a jar left. He loved it as well. So thanks again for sharing.

I have used this recipe a few times but I perfected them for the 4th. I adjusted the cayenne pepper and brown sugar a bit for more sweet heat. Everyone was complimenting me on how they loved the ribs (which by the way I cooked slow for a couple of hours over charcoal)

I cold smoked the first batch of rub for about 2 hours. Then let it cool and popped it back into the jar. Apart from adding a great smoky flavour the smoking also seemed to intensify the impact of the paprika to a large degree. Great rub and has now become my go to rub. (I occasionally halve the salt though.) Thanks - great video.

Just found your channel. Great rub recipe. BTW, the green lid, sprinkle cheese... the green lid, will fit a Mason jar. Now you can add your rub to the exact place you want it to go. God Bless and stay safe.

Rubs are very easy to make. I have been making them for years. I never make them exactly the same from time to time but they have the same flavor profile. I use brown sugar and salt in about equal amounts, Paprika, garlic powder, onion powder, ground pepper, chilli powder. A smidge if this and a smidge of that. Most of my rub is brown sugar and salt.

Hi can I substitute celery seed with celery salt? If so how much? also I don't have onion flakes but I do have onion powder. How much should I use of the powder instead of salt? Thanks!

I just try it it was so delicious I would recomen it but I just measure for one time but it still was so delicious I try to stay away from cooking because the food comes out better than restaurant and gains me weight Thank you

If I wanted to put a hint of Cherry flavor in the rub (even thought I have Cherry Wood) would you do to ad this dementing of flavor? I thought of a cherry flavoring used in cooking but not sure.

CO: You might have answered my question. I had same issue as Grant. And, Grant, here is my question. Maybe I understand now how to do it. But what ratio would you use? How much say Cherry or Apple or whatever? ------------- Grant here is my question and let me know if the Cherrries work in yours ------------------ Can I ask? -- hope you don't mind. I am just now trying to BBQ at home & outdoors to save money. So, I want to create my own rub -- say like an "Applewood" flavored one. How do I get the Apple taste in it? Don't laugh. Can I take pieces of dehydrated apples and grind them then put them in it? Or, how do they get flavors like Mesquite BBQ rub or Hickory BBQ rub or Applewood BBQ rub? We tried Applewood BBQ rub and it was good -- like below ... I love the sounds of this rub, and can't wait to make it myself. I am just curious, with the much Paprika does it matter which kind of Paprika? I am just wondering because spanish paprika is less intense than Hungarian in large quantities. Smokey tends to lend more towards color and a smokey taste, than a traditional paprika taste. I am still not sure about the differences between regular and plain, but there is also a sweet paprika as well.

+John Sanchez It probably does matter but I would experiment until you find the one you love best. I can't remember exactly what I used at this time but I have used smoked with great results too.

You are very welcome :-) I wish I could tell you but I never counted pounds vs. rub. I would think you will be able to cover several racks of ribs with this recipe. If you figure it out, let me know!

I store my rub in a quart container. If you fill it up, you should be able to do around 6 racks if you decide to be generous with the rub

I had this on pork chops last night and it was very good. Inside on a grill pan. Didn't have celery seeds so used celery salt. Wife hates hot stuff so I subbed out half the cayenne with cinnamon. I made half as much as you and still have a ton left over (thankfully) since I only used about 1 tablespoon per side.

Ugh..this video is old but I hv a question...I want to make a pork butt in my instapot. Should I sear the meat FIRST and then put the rub on and let it cook, or rub the meat and then sear and cook. I'm just concerned that the spices will burn and turn bitter. 😖😖

I wouldn't use it on the stovetop because of the sugar content but everywhere else should work well.

At 1:53, you say 1/2 cup of paprika but the menu on the screen says 1/2 tsp of paprika. Can you please confirm which measurement is the right one? Looking forward to making this rub.

i only have celery powder not seed is it still fine if i use powder instead of seed??? and dont have dried onion flakes? how about fresh finely chopped onion? for immediately consumption.

Celery powder tastes slightly different as it is made from the leaves. I still recommend using celery seed for best results. Not sure if the fresh onion will do anything other than burn. Leave it out if you can’t find any dried.

Best thing you can do is LEAVE THE SALT OUT!!! Dry brine your meat the night before with salt then add the rest of the rub before cooking/BBQing like you'd normally do. You'll thank me.

Take out the brown sugar, add more group pepper, and you get beef rub.

I tried this rub recipe on a pork butt that i smoked on July 4th. Its a good mix, but i highly suggest cutting down on the salt. 1/2 cup is way too much. Trust me i like salt im the kind of person that puts salt on pizza. But i prefer to bring things i cook up to the level of salt i want at the table. Thank goodness the butt was 10 lbs, and the salt did not penetrate to deeply. Basting it every so often with apple juice may have helped too. However eating the bark would have been unbearable for a salt sensitive guest. I suggest 2 tablespoons or 1/4 cup maximum.

Yes, everyone has a different tolerance to the salt in this recipe. Glad that you adjust as needed! Gary

You get prescription at the doctor, and you get recipe from the cook. Some European languages use the same native word for the English words prescription and recipe. So you made a wrong translation. You can find the recipe in the video as well as in the description.

Im iffy about that too.. I made the rub from the thumbnail for the video. List of ingredients sais "1/2 tsp paprika" So i mixed it all together. Put it on my ribs Then watched the video.. And then at 1:53 he says 1/2 of a cup of paprika... Meanwhile the list of ingredients on the thumbnail and the list at 1:53 in the video sais half a tsp..which is all i put in Well hopefully its still good Cause its to late to take the rub off my ribs now.. I also didnt have any ceyanne pepper but thats ok And i also basted my ribs with honey mustard sauce first Hopefully i just didnt ruin my dinner
