I do understand why an experienced diner would ask for well-done when having A5 Kobe sirloin Teppanyaki as the excessive fat would render out and make the beef a little less cloying, while still being juicy with a crisp caramelization on the crust.

That one works different to the others I have seen. Most seem to remove as much juice as possible, he keeps it together.

Generally that is where the flame underneath directly hits the flattop. Because it is hotter than the rest it permanently becomes a different color.

Is all Japanese "fine dining" either based on "high end" beef, or, as here, "surf & turf", with both "high end" beef & some seafood, or are there styles of "fine dining" in Japan that are purely based on seafood? And is fugu a "fine dining" kind dish in Japan?

There is fine dining sushi. I'm sure at places like this you could order seafood only. People like to see the steak though.

The beef seems to have more fat than meat, is Kobe beef like that?

Yes, most definitely :) But it's a type of fat that melts like butter so very unlike what you'd find in a regular steak.

Think its a way of cooking off all that fat, notice in his other posts he asks for well done if the beef is mostly white, he orders rare or medium rare most of the time...he also knows no chef will actually cook it to well done, as seen here. Also, remember Teppanyaki is a Japanese take on Western cooking, not the benchmark, it's mostly just faffing and presentation, have faith in Aden to know what he is doing, he is the expert here.

Personally, I like my cow so undercooked that a skilled veterinarian cold still save it. But it doesnt seem like he respected your "well done" wishes.

That salad at the start looked underwhelming just due to the plain piece of cucumber and tomato. But everything else was impressive

I'm torn. I don't want to give the video thumbs down because the chef was great. But to order a steak well done?! I can't support such cruelty to animals.

So many things wrong here: - chef never announces anything as he serves - shrimp presented to the teppan already peeled and deveined (ala Benihana) - soy sauce repeatedly added to foods directly from the bottle instead of toasted on the teppan first out of a classy ceramic jar and then added to foods with the spatula - steak was pre-prepared too thin and was starting to look a bit off-color - a customer requested "well" steak was cooked "medium rare" (why bother asking) - steak not served with Aden's beloved wasabi - garlic squeezed from a pre-loaded garlic press instead on minced by the chef (tacky) - fried rice was under-fried (not left to toast enough a few times)

After Aden asked the guy what he's being served the 1st time, he basically gave up trying. I guess that's what you get for $100 range Teppanyaki. I also don't like how people are talking hella loud in the background.

if a chef ignores a request for well done stake it just says to me they are not skilled enough to cook a stake till it is well done and still have it ber edible and succulent instead of ignoring it and being "insulted" they should just admit they are not a good enough chef to be able to do such a thing that's why many people say well done stake is dry and tasteless because they don't know how to cook it properly

There is no sucha a thing as Well done steak that is succulent. You obiviously dont understand that when you cook things to to 165 celcius, the every drip of the juiciness evaporates and the meat proteins harden up. Only idiot would order their steak anything but medium or rare.

That's the least "well done" I've ever seen. Personally, any chef ignoring your request is just plain rude and considering you're paying for the damn thing, they should cook it the way you ask, not the way that they think.
