1960's "Joys of Jell-O" and the Quintessential Under the Sea Salad

Jell-O has been entertaining kitchen tables since the late 1800's. So many creations but the Under the Sea Salad became one of the most well known that has stood the test of time!

Here’s your recipe!
1 3oz pkg lime jello
1/4 tsp salt
1 cup boiling water
1 16 oz can pear halves
1 tbs lemon juice
6 oz cream cheese (most of an 8oz block), softened
1/8 tsp ginger powder
Dissolve jello and salt in boiling water. Drain pears, measure 3/4 cup syrup, add water if necessary to make 3/4 cup. Dice pears and set aside. Add pear syrup and lemon juice to jello. Measure 1 1/4 cups into a 1 quart mold or loaf pan. Chill until set but not firm (2 hrs). To remaining jello, add remaining softgened cream cheese and blend to smooth. Add ginger. Chill until very thick (1 1/2 hrs) then fold in pears. Spoon into mold. Chill until firm (1 hr). Unmold. Serve on lettuce leaves if desired.

My feet are back under my Mom's table watching you make this. She loved this recipe from that same book. :) Green Jello just reminds me of school lunches. :)

OMG. We had that book! Don't remember us making anything out of it, but the cover is pure nostalgia. Under the Sea made me worry it was going to involve seafood, but the actual thing looks delicious.

Hi Jill. My mom used to make sort of lime Jello whipped up to a thick froth that was so delicious. It was probably something like this but was mixed altogether. I have the oldest Jello book but think I might have one from the late 50s early 60s. I also have my very first cookbook from high school, Betty Crocker Cookbook text edition from 1969. 🍓

Same here with Betty Crocker. I also have my mom's BC from 1956. I loved looking at that when I was little. Great pictures, info, and recipes with variations. I have the 1960s Jello and the one after that. I have made this salad, only without layers or molded. It is delicious.

Hi Jill, I am still a lover of Jello at 64 years old. Wow I loved watching this. Brought back wonderful memories of being a kid in Chicago back in the 60s and my Polish mom making her multi layered Christmas jello mold with 5 layers of red green and 2 layers of this Milnot evaporated milk stuff mixed with jello. It seemed like an all day process if memory serves LOL. Don't know how she did it with 2 rambunctious kids running around. I give a 2 thumbs up to more jello recipes. Have a nice weekend Jill.

my great aunt did this in a large round mold, kept the pears as halves and added maraschino cherries in the clearer portion. thanks for the recipe!

I'm sorta surprised we never had this growing up, I need to try it. My grandmother had red Jell-O with sliced bananas suspended in it at every Sunday supper and orange Jell-O mold with shredded carrots & celery every Thanksgiving. Have you made a poke cake with Jell-O? Poke holes in a baked white 13x9 cake, pour liquid Jell-O over so it seeps into the holes and cover with Cool Whip. Fantastic hot weather dessert.

The orange Jell-O with carrot and celery is called Sunshine salad I think.

@@TherealDanielleNelson Yes, that's it! I just looked it up and I was surprised to see the recipe calls for lemon Jell-O, I swear my grandmother used orange Jell-O. But childhood memories can be foggy when anyone who could verify is gone.

I love Jello salads. When you added the salt to the lime jello I was thinking margarita jello shots. 😆 I'm going to have to try this one. It looks delicious. 😋

I remember my mom made a layered gelatin ring. But only on special occasions because it took so long. There were layers of regular gelatin towards the top and pastel layers near the bottom. I think those contained cool whip but I'm not completely sure.

Just add a few drops of blue food colouring, and you'd have an ocean-ish aquamarine! Thank you for sharing this amazing recipe! 🙂

Looks good. I once had a jello appetizer where there was lime jello with onions and carrots and topped with tiny dollop of mayo. Loved it. Can't find the recipe anywhere. 😫

Did you hear me talking through the screen .... "No! no! Joys of Jello was from the 60s !" 😃. Mom and I made a lot of Jello treats from that book.( in the 60s 😉😏 )❤️ Thanks for the memories!

I made a spagettio and beanie weenie jello mold for a birthday party earlier this year. People were either mortified or intrigued. (and it tasted like cold spagettio with beanie weenies) I'll find a pic to post on FB.

Oh yes 1930s through the 1970s when modern medicine taught us, it was impossible to give someone diabetes, by eating too much sugar. You got to love these old recipes LOL I still remember watching my grandfather make chocolate milkshakes and putting sugar in them.
