We inherited one from my mother-in-law and all we ever did with it was cut french fries. We didn't have the instructions so we never thought of using it for anything else. It's just as well because it doesn't seem to be that great for anything but potatoes!

Depending who you ask, mirepoix can refer to a brunoise cut. And mirepoix should always be brunoise, as it serves primarily as a source of flavor. A rough dice doesn't have enough surface area. If you want big chunks of your vegetables, add them in addition to your mirepoix.

For a two-step dice, make slices first then turn the blades so they're crossed. The slices will then get cut into cubes.

It would work for mini cubes... One slice for thick slices, then stack those slices like a pack of cards on the crossed blades, push and you have mini cubes!

My mom is 81 and has Alzheimer's. Sis and I take care of her and dad. She can be chatting away and then grab you and pop you hard!! They don't always get weaker. We quit crying years ago and just laugh at all she does. It's easier.

my mom had one of these...you dont have to pick up the veggies and re slice them to make diced veg...turn one of the blades 90 degrees and you can dice in one step

Years ago my mom talked about my grandmother using one and she said she wished they had products made like that now. I ended up finding her one on eBay and she was so excited. Said it was still super sharp and made prepping so much faster.

Oh man that brought back memories. I'm 56 years old and we had one just like that when I was growing up. Ours didn't get stuck like that. ( on top ) the key is to go really fast. I loved using ours. Over the years I have always wanted to find another one.

Loved this, it brought back wonderful memories. We had an older version of this when I was growing up. My parents purchased it in the 1960s. It is how we made french fries, diced potatoes, and sliced potatoes. We didn't use it for other veggies or fruits, just potatoes. It getting stuck was a common occurrence.

My mum had one of these. She used to use it to make chips. I can't remember her using it for anything else but I do remember how thrilled I was when I was promoted from peeling the spuds to using the Veg-O-Matic. The thrill lasted for the first two times I used it, but it really did speed up cutting chips, even though it cut them thinner than we were used to. Our family ranged in size from six to fourteen, as we often had cousins, grandparents and the like living in one house, so this really was a time saver.

My youngest brother saw an add for this thing and pitched a fit (while a K-Tel's greatest hits album was playing - oh yeah, we were 70s bad asses) until my parents caved in and went to Woolco to get one. As soon as we got home, the young terror decided he was going to chop every single vegetable he could get his hands on. The apple slices were good, so were potatoes and then he got a very ripe tomato (I quickly backed away as far as I could but could still see what was going to happen) and WHAP! Tomato goo all over the place with a screaming child in the middle of it - the Three Stooges couldn't have come up with anything better. A precious memory I don't hesitate to remind him of.

I remember being so happy that I saved $8.99 to get my Mom one for Christmas 1966. She us only 4 foot 11 inches and could not push it down even standing on a stool. My 6 foot 4 inch Father had to do all the cutting for our night of french fries. LOL my Mom and Dad still laugh about my excitement of getting her this. Thank you for bring back happy memories

When I was in college I worked in a chain restaurant, and we'd use a machine similar to this to make the hash browns. Steam the potatoes then push them through a series of wire frames. My fingertips were shredded, too, until I discovered the Kevlar gloves.

Boy, this was a blast from the past! I truly enjoyed the memories. We had one from the mid 60s and I remember making french fries. Put the potato on the screens, push down a little to set it firmly on the top and WOOMP!!! I loved it at as a late pre teen, early teen ager. I never remember it popping loose and sticking to the top though. We had it for years and years but I don't think we used it much after the 60s.

We had one and I used it for everything. I loved it. It was passed down thru 3 generations. It finally fell apart 😢 Now I have this thing, same concept only it is attached to a heavy duty bowl so things go right in it. It comes with different cutting blades and things and lids, 3 bowls & 3 lids, plus the cutting lid you just remove when you're done and put the regular lid on. Very high quality material.

Ugh! Brings back many memories! My dad used to make us kids cut the potatoes using this so he could make His French fries with hamburgers and Sunday breakfast potatoes. The dicing process was difficult so we just ended up using a knife to finish the dice on the French fry cut to do the country fried potatoes. He liked them small so they would get crispy. I don't really miss this! LOL I am also reminded when I go to In n' out!! Thanks for the blast from the past!

If you sluced then used the french fry setting you would geta dice. A two step dice, maybe a bit bigger, with less effort overall.

We had one of those and put a lot of miles on it. It looks flimsy, but was surprisingly durable. We had a big garden, almost an acre, and my mom canned and froze a lot of the vegetables. This was before they had food processors. If you wanted to grind something, you used a hand crank grinder that clamped to the edge of a table or counter top. This was the only thing around that would slice, other than a knife. We used it to slice cucumbers for pickles and carrots to freeze. When you're canning pickles or freezing carrots by the bushel, it really did save a lot of time. Eventually one of the blades broke, but I found another one in a junk store.

My mom still has her Veg-O-Matic from the 70s! She pretty much only uses it to make homemade French fries but still pulls it out of the cupboard at least a couple times a year!

As a child we used the Veg-o-matic the cube beets for canning. I currently use the 3rd generation to slice potatoes for raw fries and French fries. I love my Veg-o-matic.

You’ve solved a mystery for me. I’ve many friends and family close to my age, 50, who are vehemently opposed to mayo. I’ve never understood their overboard reactions but, now that I think of it, their mothers were the type who were always trying those wacky magazine recipes that put mayonnaise in everything.

I was born in 1975. My mother used to make me peanut butter and mayonnaise sandwiches, instead of PB&Js. Lol. Oddly though, I liked them! I love mayo to this day. But, it has to be said that it was a WEIRD concoction, and I’ve never once made it past childhood. My mother must have picked it up during that mayo fad era. After childhood, I only make PB&J sandwiches for myself (or PB&banana, with the bread toasted).

I have a vegamatic from the early 60's. They were at first, sold in department stores with live demostrations. these were the first informercial. This vegamatic was bought by my grandmother, when she died it went to my mother, then to me. It still works great.

Hi Emmy - I am an Executive Chef - and have a simulator device , but it’s much bigger and you don’t have to be as forceful . The blades go dull so it gets sharped once a month, or you purchase and replace the blades and you will hurt yourself easily if not careful . It also has a mandolin attachment. It’s a very useful and helps keeps things in the same shapes and sizes.. Thanks for the video - you are awesome! Lylaboo1

Oh man, your whole recipe with the potato pancakes and apple sauce, reminds me of my grandmother that is from an island in the Frisian islands off the coast of Germany, and before WW2 they were able to make these German/ Swedish? Potato pancakes with the apple sauce. Thank you for bringing me back to my childhood for a moment

I've had a Veg-o-Matic for 50 years! I still use it, it works! I do potatoes, and to make it easier I cut them in half and run them through length ways, much easier. Diced, I put the Veg-o-Matic in a big pot, 4 1/2 quart I think. That way the diced potatoes don't fly out all over the place. Potato soup! Oh boy! French fries, easy.

We had one of these when I was a kid. I liked to use it to make flat fried potatoes, which were kind of like thick chips that were pan-fried. They worked somewhat like french fries, but you always had to expect 50% of the ones you made wouldn't reach the table. They'd always mysteriously disappear sometime between leaving the frying pan and plating them up.
