We challenged chefs of three different skill levels - amateur Emily, home cook Daniel, and professional chef Lani Halliday from Brutus Bakeshop - to make us a delectable custard dessert. Once each level of chef had finished and tasted their final product, we asked food scientist Rose to explain their choices from an expert's perspective. Which custard would you cap of a meal with?

I think at this point I would say Emily is a level 1.5 chef. She actually knows how to make some tasty looking cuisine. I'm a level zero chef, I make reservations

I still think that sandwich looked good and probably would have tasted good. I've seen similar ones on cooking shows and on brunch menus. I just don't think it should be called a grilled cheese haha

Separating the yolks with your hands actually isn't bad, your fingers are soft and can't puncture the yolk. Make sure you wash your hands before and after touching them.

When I need to separate eggs I only do it with my hands. Don’t use the egg shells it punctures the yolks every time

Because mistakes happen even from the best of us. Also Emily was cooking something she was used to making and learned how to do. I actually learned something from her. I didn't know that you could make a Custard from Coconut milk! 😁

I've messed up making a recipe/dish I've made so many times before. Messing up happens and them leaving the mistakes in the videos helps us all feel better about our own mistakes and able to relate to the people in the video. We live and learn. Although now I want custard. 🤣

Grilled cheese with fruit is actually good. The combo is often found on charcuterie boards anyway. Ketchup on French toast however...absofuckinglutely not.

Daniel's custard reminds me of my mom's filipino dish leche flan. She also kept a bunch of cans of evaporated milk and condensed milk.

My mom is Mexican and her flan used to be one of my favorite desserts, I remember she’d always be stocked up on evaporated milk and condensed milk too, it was amazing🥺

Its definitely Leche Flan. Judy Ann Santos' leche flan recipe has cream cheese. Makes it even richer and cuts the sweetness. I love it.

I loved this episode! But, I will say.. Daniel flipping his square flan onto a small round plate was easily the least satisfying things I’ve seen all day 😂😂 It did look amazing cut, though!

Emily Lorenzo and Frank were great, but I absolutely adore the "season 2" cast :D Only a few people were misses for me---I used to not be fond of Daniel until I saw a lot more of him and found him to be very sweet, and the Level 1 chef who put WAY too much salt in his enchiladas whose attitude I just found a bit grating (I'm sure he's a decent person tho)

Dang Emily did a pro chef move with separating the yolks from the whites. In reality, separating them with your hands is better as the yolk has a very little chance to crack. Your fingers are after all softer than the sharp rigid edges of the shell.

Well, I guess that Daniel had more experience than Emily, it’s just the things they decide to make today(You don’t necessary need a tempering process for the flan he is making) Thus, he did kinda make everything from scratch, while Emily used pre-made crust and (dairy free)pre- whipped cream.

Normally the level 3 chefs are super serious, and I liked how Lani was a little less serious and a little more loose and showed a little more personality. Also, ~I love John, Stephen, and Emily, they're so hilarious and fun to watch~

Thank you Lani!!, this is the first 3 levels video I've seen in a while that I've been impressed by. Mostly thanks to you. You shared tips and cooking techniques and explained them. You didn't just say we're cooking this in a water bath because we need to. You told us what a bain-marie is called and why we use it. I will say when she ran out of gas from the small torch I wish she had shown us how to do it using the broiler. There are some really interesting tip and tricks that would have been really impressive. But still Thank You Lani! You are amazing!

Daniel’s flan is Brazilian dessert 101. The perfect recipe is: 3 whole eggs, 395g of sweetened condensed milk (1 can) and 395g of milk. Vanilla is optional. Just mix everything and follow the same steps he did for baking and the caramel

We call it Flan Napolitano in Mexico. I make my flan exactly like Daniel, although the (unflipped) top never comes out as brown as his. Either he overbaked it or some of the caramel sauce made it to the top. But his flan looks good!

That was for a switching ingredients video. They need to do a level 2 and 3. So they temporarily made her a level 2. So technically she's still a level 1. But we all know that on the inside she has evolved

Daniel: I don't know the exact recipe, and I suspect the process is pretty different, but my mother's caramel pudding looks similar to your flan! Have you considered cooking the flan in longer, rectangular bread pans instead of the large, square-ish pan, to make flipping easier? :)
