The 4th year, St Clair's Best Authentic Soppressata Contest unites Soppressata-makers from across the GTA, as they bring out their best to not only be judged by an esteemed panel of salumi aficionados, but the general public as well! That means you!
I repeat: Not only is the entire event free, but all guests are allowed to taste each and every cured meat that is entered to be judged during the event!
Also, in our new tradition of featuring another classic cured meat from the glorious rainbow of salumi, we'll be introducing a cappicola showcase as well!
For foodies who are passionate about salumi, Italian cuisine, spicy food, while being surrounded by the vibrant energy of a classic Toronto neighbourhood, this is a CAN"T MISS EVENT every year.

Unfortunately I found out about this festa just after the start of covid. Does anyone know if there is any plan for the festival to happen in 2022 if it's allowed? Because I've got some Soppressate and Capocolo that will buckle all your knees, and an N'duja that'll make you cry for mamma! I wanna show everyone what Calabrese-Canadians from the east end of Toronto are doing! :) A presto!

😏 c'mon, unless you're 80, I think you guys know a controlled environment ( humidity and temperature) is needed to do this. Guesswork in garages during the fall is risky.

That's unless you paid attention to the 80 year olds ;). Increase the humidity, put snow on the floor. No need for the fancy tools!

@@MrSteelermania yeah but I’m not knocking the 80 year olds. Although very limiting, they obviously mastered the craft with what was available. I agree with the conversation in the beginning. For consistent year-round product, you need a controlled environment. By the way, snow on garage floors during the northern cold, melts slowly and provides very little relative humidity as your garage is still very cold. If anything, a huge vat of water and rock salt under the salami makes more sense. But what do I know, I’m not 80!😆. All in good fun! Thanks for the response!!
