I got called to make a monstrosity by my old manager. Japanese restaurant. so okonomiyaki deep fried (it was in Scotland) sliced in half like a burger bun, inside was tempura veg, 2 tonkatsu's, teriyaki chicken that after mostly cooked and covered in sauce was deep fried, a bed of sweet potatoes. all skewered together to hold its shape battered one more time and fried for good measure..... it was disgusting yet beautiful. Not the least healthiest thing i made, but possibly the most fun thing i made. We have had a giant pot of hot chocolate and a giant pot of spiced wine at Christmas, thats the way to celebrate. Everyone gathered to play games and chat, and when your cup runs dry walk into the kitchen and ladle yourself a nice hot cup before returning to the party. Try it. Its a Hygge feeling.

Just saying, check the ingredients of the package next time you're buying some. It's only cocoa, vanilla and sugar. Been making my own mix ever since realizing that. Ready mixes are unreasonably expensive for what they have inside. For a standard mug, take about 2 full dessert spoons of cocoa powder, add about half a package of sugary vanilla and some sugar for extra sweetness. Stir, heat in microwave for 1 min, take out and stir again to get rid of cocoa clumps, microwave for max. another minute. I'm too lazy to wash pots or melt chocolate, just gimme my 2 minute homemade hot chocolate.

Same... I ended up on an 8 year quest to perfect hot cocoa as a result of having one good one once and the packaged stuff not comparing. Here's a hint, even the pro is doing it wrong. Over the course of that 8 years, I found that creating an instant blend gives you more control over the ingredients. The key is to use a quick dissolving sugar in a ratio to the cocoa that is high enough to prevent clumping, and to use a "ruddy red" cocoa powder, as well as to use a holiday spicing blend (sorry, my blend is a trade secret). That's not enough though, if you only use water the resulting drink is watery and gross. You need dairy, so only fill that glass halfway with the boiling water, stir till well incorporated, and add the secret weapon - whipping cream that has been whipped to the point where it is thickened but not quite whipped cream. This brings the temperature down to a drinkable temperature, and dramatically improves the flavour, adding depth and richness. Garnish however you like, but I think its perfectly fine as is at that point. I've tried the melt it in a pot method, the results aren't quite as good.

I love using vanilla too, it makes the chocolate flavor better
