Thank you for making me laugh out loud. I had the very same reaction. These are the people who can't peel an orange or grate cheese. I don't know that I would consider this to be a basic challenge but at least chef Ramsey got to teach something for a change.

Even those who can make mayonnaise (or hollandaise or bearnaise) probably didn't manage to do it on their first try. Let he who has never broken an emulsion cast the first stone at the hapless newbies. :) (Now MY first hollandaise actually came out perfectly. Except that I stupidly used salted butter and the perfect-looking result was totally inedible. Might as well have just taken the cap off the salt shaker and upended it on my eggs benedict instead of making the sauce. So I certainly won't be casting any stones.)

Once you do it it's actually super easy. Buying it is fine, but I never use the whole jar so I prefer to make it myself.

I'm giving that food processor on the table the side eye. The first time I tried to make mayonnaise, I figured I'd use my food processor, since it has a slow-feed mechanism for liquids. I can just pour the oil into the feeder, and it will drip into the food processor slowly while mixing. Except my batch was too small and the blades didn't make enough contact with the ingredients. If I was trying to make at least a quart of mayonnaise, that might have worked out. The next time around I used a stand mixture, fine-tuned beforehand so that the whisk attachment was as close to the bowl as possible. It came out beautifully. Except that I used extra virgin olive oil.

@@andresbluebird mayonnaise is very light on flavor. A little salt, egg yolk, some vinegar or lemon juice. If you use a strong oil like extra virgin olive oil, it doesn't really seem like mayonnaise to me anymore. It's more like olive oil _shaped_ like mayonnaise. And anything you put it in is going to taste like olive oil, which isn't always what I'm looking for.

@@tom_something You can use Extra virgin olive oil, but it shouldn't be more than 20% of the amount of the other type of oil (sunflower for example) you use. Also I miss mustard in this recipe or in the video. I might be wrong, but where I come from that is a key component for making mayo.

I never managed to make a mayonaise in my life. I had a short job in a kitchen during summertime (as in just making salads and general keeping clean). The chef stood right next to me, told me what i gotta do. I was confused, he was confused, it just didn't work. Neither of us figured out why it didn't work. So after watchign this vid.. i'm still stumped.

Well, for a change I can hardly blame the first batch of people for having trouble with this. It isn't one of those things where anyone but an idiot can just look at the ingredients and make a good guess at the best way to combine them. Even when they know the principle of this type of sauce, lots of people still struggle with getting the technique down pat. How many have ever made their first mayonnaise or hollandaise without it breaking on them? I'd give anyone a pass on this, as long as they didn't stick the immersion blender in their eye. :)

@@errhka I once worked as a kitchen-help as a part-time-job. I was asked to whisk up some mayonaise. Asked how it works, had it explained to me. Chef stood right next to me, to make sure i did it correctly. Apparently i did it correctly, but the darn thing just wouldn't come together. Chef and i were both confused why it didn't work. In the end he whipped it up and i tried a few times at home, to no success. Even the video coulnd't help me, because i did it the exact same way the chef explained it. :/

orrrrr..... you can follow the James Barber method with the stick mixer: put egg and vinegar/lemon juice in the tall mixing cup. pour oil over it and whizz. As you pull the stick mixer up, *voila* instant mayo. 30 seconds max.

@@wenjus It may be different in the US, but I can't imagine how bad your stomach would feel if you ate that much oil(cus that's 90% of that bowl)...it needs something more(mustard) to take away the greasy taste.

@@teere32 I know, that's what I meant, i mean you can't do a proper mayo without mustard, I currently live in Indonesia, and coming from switzerland (french part). I even smuggled some dijon mustard to make my homemade mayonaise, because I cannot find a single good mayo in Indonesia, they freaking put sugar in it 😱

The best thing about making your own mayo is that you can adjust the seasoning to your taste. I live to put a touch of Dijon mustard in mine and I use champagne vinegar.

It isn't even difficult. Put egg in tall cup, add vinegar, start mixing with a stick blender, slowly pour in oil, tada, you've got mayonnaise in less than a minute.

I use a whole egg and a cup of olive oil a tbs of lemon juice a tsp of mustard. Then I use an immersion blender and in under in 20 seconds it's done!

Zaxor Von Skyler question, if I whisk it by hand how long would that take and does it have a higher chance of separating? Could I also do this with a blender?

@@sisronweasley2074 in both those methods you have to pour in the oil very slowly. Wisking would take a bit of effort but you have more control. Blending is easier but the key in both is dripping the oil in where in a immersion blender all it requires is dumping it all in and blending alot easier. I suggest watching a Gorden Ramsey video on making mayo by blender here on KZfaq.

I start with yolk, add a pinch of salt, a tbsp of mild mustard, give it a good whisk, and then begin to add oil in tiny bits. Once the egg-oil mix is really thick (I mean really thick!), start adding drops of lemon juice until I'm happy with taste and texture. Works really well.

So I've been trying to work out why I've always known making mayonnaise to be a quick and easy process and I think it's your beaker that's the problem. The beaker that came with every hand blender I've ever bought has straight sides and is really close to the width of the blender which means that when you throw in the egg first and pour on the oil last you can push the hand blender down onto the egg start whisking and slowly pulling up and it will naturally bring in the oil when it's needed.

Well. I learned something new today that's for sure! I had zero idea knowing how to make mayo coming into the video other than there was an egg involved lol. With that being said, I'll stick to the lazy route and get mayo from the store 😂 Don't lie 99% of you are going to do the same.

I use the Chef John (foodwishes) method. As long as you have an immersion blender and a container that's just a little bigger around than the whisk end, it's super easy to make mayo. You don't even have to add the oil slowly. I like to add some dijon mustard as well as apple cider vinegar and a squeeze of lemon juice.

Vegan mayo is so easy to make, and it does not spoil as easily :) Immersion blender, soy milk, rapeseed oil, salt, lemon, mustard. Add garlic and it is pure heaven!

Seriously guys, mayonnaise is very simple to do once you get it. The golden rule is : start it well ! But how to start it ? 1. In a bowl, put one egg yolk and the same amount of mustard (plain one) . Add salt, but not pepper 2. Mix this TO WARM IT UP !! Yolk and mustard usually come cold from the fridge, and you need to whisk it for at least 20-30 sec 3. Prepare some oil (sunflower preferably, not olive oil -> otherwise add more salt) aside in a container that is easy to pour with 4. Pour little by little the oil, while mixing constantly Advices : - put some cloth under the bowl, so it won't rotate while the mayonnaise is thickening - add a tiny bit of lemon juice (or vinegar) around the end of your whisking ; it will help the mayonnaise to kinda "shrink". but it's not necessary - when its done, put it immediately to the fridge, and let it dry (cover it, best kept in a mustard pot or something) Enjoy ! Mayonnaise is a very easy sauce to make, unlike what people think ; and from it, you can actually do a lot more sauces ! A cook-addict :)

Put a whole egg in, the lemon juice, pinch of salt and about3 times the volume of the egg in oil (neutral, not olive), use your immersion blender at the highest speed and keep it on the bottom of whatever container you're using without lifting it: Mayonnaise It's actually super easy

I don't use vinegar or lemon juice, I take a teaspoon of mustard and an egg, salt and pepper, and whip them all together. Then I add a spoonful of sour cream to lighten it up. I almost never buy mayo. Only when it's really hot and I go for the eggless store bought kind for safety.

Tips: add a little mustard at the beginning to keep it from separating, add 1-2 boiled yolk for better taste and to double the quantity, just add a little water and keep adding oil.

Mayo is an ambitious one, it's super easy to wreck everything. If you drip the oil too fast, you have to do it all over again. I only tried doing it once with my family at home and we had to do it three times to get it right.

Well, today i learned something... i make my mayonnaise without vinegar or citrus juice, and i use a whole egg plus some garlic sometimes. And it works perfectly ! In 5min i have a delicious homemade mayo. It's delicious with steamed or boiled zuchinnis or white fish and potatoes cooked in broth with other veggies 🤗. I use the blender and a tall, narrow contenant like some of them did.
