Kurasu抽出レシピシリーズ。今回はIced Coffee!
Kurasu 京都店のカフェで実際に使用中の、ベースの抽出レシピのをご紹介します。
これからの暑い季節にぴったりの爽やかなアイスコーヒー、HarioV60のドリッパーを使った急冷式で簡単にご自宅でも淹れる事ができます。
お湯:150g
90~91°C
65~75gの氷
30gのお湯
30秒蒸らし
90gまでお湯
60秒経ったら
150gまでお湯
1分40秒-50秒で落ちきり
サーバーの中の氷を全てとかす
氷を入れたグラスに注いで完成
コーヒーの生産地や焙煎度合い、いろいろな条件によって味の出方は変わってきます。
カフェではコーヒーによって1つ1つレシピを変えています。
少ないものでは14g、多いものは20g近く使うことも。
紹介したレシピを基に、淹れてみたコーヒーがもし薄いと感じたら豆の量を多く、逆に濃いと感じたら少なく調整してみてください。
おうちでのコーヒーをより楽しんでいただけるお手伝いができれば嬉しいです。
Here’s our basic iced coffee recipe we use in our cafes at Kurasu.
Using a V60, just tweaking slightly our base hot pourover recipe, we can brew delicious and flavorful iced coffee.
Coffee:15g
Water: 150g
90~91°C
65~75g of ice
30g water
30sec bloom
Pour until 90g
After 60 sec
Pour until150g
Finish brewing around 1:40-50
Stir server until all ice melts
Serve in cup with ice

Kurasu comes from the Japanese word “to live” or “lifestyle.” Starting as an online homeware store, we are now globally recognised as the premiere shop selling Japanese coffee brewing equipments and feature a subscription service partnering with specialty coffee roasters from around Japan.
We serve speciality coffee in our shop in Kyoto which opened in 2016, and Singapore in 2017. In 2018 we opened our 2nd Kyoto store as a roastery cafe in Fushimi Inari, along with our first store in Bangkok. We’re currently roasting with a Giesen W6A.
Our aim is to showcase Japanese coffee culture to the world through introducing coffee products, roasters, and our own roasts. We are a coffee equipment retail store, cafe, coffee roaster, and a medium for specialty coffee culture.

Nothing beats a light roast iced coffee in the summer! I've been using a method similar to this in ratio for over a year now and it always makes the perfect cup.

コーヒー初めて1週間の初心者です。浅煎りのコーヒー豆に合いそうなレシピですね。 挽き目が細かめなのと攪拌する工程だと深煎りの豆の悪い部分が出やすそうなので、浅煎りで淹れてみます!

another ice in the glass? that's going to make it very light. but interesting. will try.

no because the initial ice in the brewer glass was compensated with less hot water so all the ice is supposed to melt to get the right brew ratio. you add ice after (like any iced coffee method) to keep it cold for longer but it's not like ur adding a lot of ice.

初めまして。動画が拝見させて頂きました。 二人分のレシピの場合は豆、湯量、氷は倍で考えればいいのでしょうか? 後、湯を投入するタイミングは一人分と一緒なのでしょうか?

It's a Wilfa Svart grinder. We highly recommend for home use.

Great question, we'd love to answer but unfortunately we don't have the Encore in our shop, and it's not readily available in Japan, so it's hard to say from us. Sorry.

Based on recipe, water = 10 x coffee weight. ice cube = 5 x coffee weight.

from the size of it I would assume it's the 02, but with 15g of coffee 01 would be enough I would say. but it's scalable :)
