This method won't be for everyone. I've used a hunting knife to scrape paint and gel type stain off of furniture for as long as I've been refinishing pieces, and has become my standard scraper. As I point out in the video, this can be a dangerous technique, but also very useful if you're careful.
Other tips not mentioned in the video:
If the knives are new or very sharp, you can take them to the wire wheel on the grinder to dull them
The blade should normally be tilted so that it does not cut into the work you are stripping, but can be up to 90 degrees depending on the work area.
Pushing or pulling the blade does not matter providing you keep your hands and other body parts safe, and the blade tilt follows with a direction change.
Careful at outside corner joints. It's easy enough with a regular scraper to catch and tear out the wood, but with the knife the chances increase.
Keep in mind, this is to strip off the majority of coating that would normally get caked on sandpaper. A finish sanding will be necessary before new stain or paint is applied.
